Peanut Butter Cookies @TinaKashian1 #Holiday

Hello from TINA KASHIANWho doesn’t love cookies? I’m more of a cook than a baker, but I tried this recipe for peanut butter cookies, and they turned out soft, sweet, and delicious. I found this recipe on Pinterest. It’s easy to make and you may have all the ingredients in your pantry. I plan on taking this to an upcoming cookie exchange.




Ingredients:

¾ cup smooth peanut butter

¾ cup unsalted butter at room temperature

1 cup sugar

1 cup brown sugar, packed

2 eggs

1 teaspoon vanilla extract

3 cups all purpose flour

1 teaspoon baking soda

½ teaspoon salt

 

Directions:

Preheat oven to 350 degrees F. In a large bowl with an electric mixer, beat peanut butter and butter until smooth. 

Add sugar and brown sugar and beat on high speed until light and fluffy. Add eggs and vanilla and beat on low speed until combined. Add flour, baking soda, and salt and beat on low speed until cookie dough comes together. 


Roll into one-inch balls and place two inches apart on baking sheets.  Press down slightly with a fork to make a pattern. 


Bake for 8-10 minutes, just until set. Remove and let cook on baking sheets. 



Makes about 30 cookies. Enjoy!

    My favorite holiday cookie has to be cut out sugar cookies. Such fond memories of my brother and I trading bowls of colored icing and spending hours decorating the cookies Mom made. I look back and marvel at how smart Mom was to keep us busy and now arguing during the long school break at Christmas by keeping us busy making edible goodies.

  2. Your cookies turned out picture perfect, thank you for sharing the recipe. I tried Cleo Coyle's cranberry cookies recipe this year and that was a really good one. I am not sure that I have a favorite because I like so many different types. I am making gingerbread reindeer cookies today, just turn the gingerbread man on his head and you have a reindeer :). Have a very Merry Christmas!

  3. thanks for sharing this recipe. they look fantastic. I like so many different cookies. I do wait every year to make some of my husbands great grandmothers cookies. like spritz and cinnamon and camels
