Vegetable Quinoa Soup @TinaKashian1 #Giveaway

Hello from TINA KASHIANI love soup in the colder weather months. I’ve tried different recipes for split pea, bean soup, broccoli cheddar, minestrone, and more. I shared a recipe for Mediterranean lentil soup here. Today, I'm sharing a recipe for vegetable quinoa soup that I discovered on Pinterest. I modified it for my tastes. I wasn’t sure about the quinoa, but it “melted” into the soup and the recipe came out delicious. I’ll share more soup recipes as the winter months approach.




Ingredients:

2 medium carrots or 8 baby carrots, diced

2 stalks celery, diced

1 small onion, diced

¼ head of cabbage, chopped (I used a mini cabbage)

2 zucchini, diced

1 can (14 0z) diced tomatoes with juices

2 cans (14 oz) beans of choice, drained and rinsed

1/3 cup dry quinoa

2 teaspoons herbes de provence

½ teaspoon garlic powder

6 cups water or vegetable broth

Salt and pepper to taste



Directions:

In a large pot, heat 1 tablespoon olive oil and add onions, carrots and celery. Sauté for five minutes. Add the herbs for the last minute.


Add remaining ingredients.


Bring to a boil, cover, then turn heat to low and simmer for 45 minutes to 1 hour.


Taste for seasonings and add more salt and pepper if you prefer. Enjoy!

  1. Early on a frosty morning reading you post warmed me up and the imagination made me smell the aromas as I was reading it.

    My absolute favorite soup/stew would have to be my Mom's vegetable beef soup. As she use to say, you throw everything in but the kitchen sink. Of the flavors from a soup bone and some leftover roast meat add as well as all the fresh from the garden veggies (even if they are those we froze to have during the winter months). It's one of these rare things that seems to taste even better as leftovers.

  2. Soup looks delicious. My favorite soup is Calico Bean soup with at least 15 varieties of beans & lots of onion, celery, mushrooms. Always make a big pot at the beginning of fall, & freeze a portion for during the cold months. Runner ups is Broccoli & Cheddar Soup, & Clam Chowder. bess deepotter 84 at gmail dot com

  3. We enjoy making chicken noodle soup and then we can it and mail several jars to Ca where my family live. My hubby likes to make all kinds of soups so whenever we have a lot of left overs we clean out the refrig and name it refrigerator clean out soup I am disabled so he is the main chef I just give him ideas what to make like yesterday he made a chicken lasgana and it was so good. I am also the sous chef I do make some easy things but he does the dinners. We live in eastern Iowa we met thru his ex-mother in law we were pen pals and she told me all about him that he was no good etc. Well I flew out to Iowa for a wedding and met him and now on Jan 1st married 20 years. I miss living in Ca and one day soon hope to move back there for my family that I miss and the weather! peggy clayton ptclayton2 at aol dot com

  5. This looks like a lovely soup. Plenty of protein with the quinoa and beans.
    I'm curious that there is no suggestion of rinsing the quinoa before adding it to the mix.

    1. Yes, you can rinse the quinoa before adding it to the soup. I purchased organic and the bag said it was an optional step.

  10. Picking a favorite soup is almost as impossible as picking a favorite book! I like black bean soup topped with shredded cheddar cheese, a dollop of sour cream, some diced red onion, and some slices of picked jalapeno.
