Roasted Tomatoes with White Beans and Herbs - #recipe by @LeslieBudewitz

LESLIE BUDEWITZ:  You can’t go wrong with roasted tomatoes, herbs, and mozzarella, right? It’s a combination typically served with pasta. In a bit of free-form cooking, I subbed in canned white beans, which makes it perfect for the gluten-free, and totally yummy for everyone. We served it with slices of a very fresh baguette and grilled white fish. It also goes beautifully with chicken. You could toast those baguette slices for crostini and devour it that way as well.

Roasted Tomatoes with White Beans and Herbs 

5 tablespoons olive oil, divided

1 pound cherry or grape tomatoes, or a mix, halved

6 small garlic cloves, peeled

kosher salt 

freshly ground black pepper or red pepper flakes to taste

1 15-ounce can cannellini or other white bean, drained and rinsed

1/4 cup fresh basil, julienned, or tarragon leaves, loosely packed

½ cup water-packed mozzarella, cubed

Heat oven to 400°F. Pour 2 tablespoons olive oil into a 13-by-9-inch baking dish. Add tomatoes and garlic and spread in a single layer. Drizzle with 2 more tablespoons olive oil, and sprinkle with 1 teaspoon kosher salt and black or red pepper. Roast tomatoes for 20 minutes, until bubbly and juicy. Remove from the oven and lightly mash the tomatoes and garlic with a fork. Add beans. Stir and season to taste. Roast an additional 5 minutes. Drizzle with remaining 1 tablespoon olive oil. Add herbs and cheese and serve immediately. 



Makes 4 servings. Keeps well in the fridge for a few days and reheats nicely.
