MADDIE DAY here. I realize Lucy Burdette gave you strawberry scones yesterday, but I simply had to continue the strawberry theme! And what could be better than a simple, slightly sweet, butter-laden biscuit with sweetened berries and whipped cream?
The strawberry season in New England is short and beyond delicious. To celebrate, I'll send one commenter an ARC of Murder in a Cape Cottage, even though that book takes place in December with nary a strawberry in sight.
Strawberry Shortcakes
Ingredients
4 cups flour
3 tablespoons sugar
¼ teaspoon salt
5 teaspoons baking
powder
3/4 cup cold butter
1 1/4 cups cream or whole milk
Directions
Preheat oven to 450 degrees.
Line a baking sheet with parchment paper.
In a food processor, mix flour, sugar, salt, and baking powder. Cut butter into half-inch cubes and whir into dry ingredients.
Add cream or milk and pulse until just mixed.
Knead the dough on a lightly floured pastry board until it just comes together, then roll it out to about 1/2-inch thickness.
Using a 3-inch
biscuit cutter, cut the dough into rounds and place on baking sheet.
Bake for 10 to 15 minutes, or until golden brown. Cool on
a rack.
To serve, split a shortcake in half. Top with slightly
sweetened strawberries and whipped cream. Enjoy with a cup of tea and a good
book!

ReplyDeleteFresh picked strawberries dipped in sugar are usually the first treat of the year. Next up has to be homemade vanilla ice cream with fresh strawberry chunks blended in. Another great favorite of mine is this cake. Got the recipe in the summer 1975 for Strawberry Cake from the Imperial 150th Anniversary Cookbook.

1 pkg. white cake mix
3 tablespoons flour
3 eggs
¾ cup cooking oil
¾ cup water
1 – 3 oz. pkg. strawberry gelatin
½ cup frozen or fresh sliced strawberries
Ingredients for icing
2 tablespoons butter
1 ½ cups Imperial Powdered Sugar
2 tablespoons crushed strawberries
Directions
Combine all cake ingredients in a large mixing bowl and mix well. Bake in greased and floured tube pan in a 350 degree oven for about 40 minutes or 2 – 9” layer cake pans for 25 minutes.
For icing combine melted butter, powdered sugar and crushed strawberries. Drizzle over warm cake. Decorate with fresh strawberries.
Face it, we love strawberries and love them any way you can think of from a salad ingredient, to desserts to use in drinks. Fresh picked makes it all the better!

I mostly just eat them, plain or if they aren't tiptop, a sprinkle of sugar or Penzey's pie spice. Mom used to make shortcake from Bisquick, and top the juicy strawberries with (I kid you not) whipped Milnot. She preferred only the juice, no actual berries. I have made strawberry trifle a time or two, once for my Shakespeare students on the Bard's birthday. ;-)
ReplyDeleteStrawberry shortcake is definitely a favorite of mine. Your version looks both delicious and simple! I love strawberries in yogurt and oatmeal as well. And they make a very good addition to salads, especially with feta.

ReplyDeleteMy very favorite way to eat strawberries is just picked, red, ripe and juicy from the fields. If we can control ourselves, they are also wonderful in strawberry shortcake, in fruit salad, in smoothies, on top of vanilla ice cream and dipped in chocolate!
