VMBURNS: Have you ever wondered who got the bright idea to add vegetables to bread? Or am I the only person who thinks about such things? Well, I have to say, whoever first decided to add zucchini or carrots to create a sweet treat while still getting in a daily serving of vegetables was a genius! My mom was a good baker, but she only baked desserts and usually only for holidays (i.e. Thanksgiving and Christmas). Plus, I like vegetables (most of them) anyway. So, my mom never had to "hide" vegetables in other foods to get me to eat them. However, given today's active lifestyle where everyone is on the go, it can be hard for me to make time for breakfast (yes, I know it's the most important meal of the day) and to eat as many vegetables as I should. So, this recipe for Lemon Zucchini Bread kills two birds with one stone, AND it's pretty darned tasty!
LEMON ZUCCHINI BREAD
- INGREDIENTS
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cups sugar
- 1 cup finely shredded unpeeled zucchini
- 1 egg
- 1/4 cup cooking oil
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons lemon zest
- For the glaze
- 1/2 cup powdered sugar
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon lemon zest
- INSTRUCTIONS
- Preheat oven to 350 degrees and spray a loaf pan with cooking spray or coat with butter.
- Combine flour, baking soda, baking powder, and salt in a medium-sized mixing bowl and set aside.
- Pour batter into the greased loaf pan.
- Bake at 350 degrees F for 45-50 minutes or until golden brown.
- Cool on a wire rack for 15 minutes, and then remove from the pan and cool completely.
- Combine ingredients for glaze and drizzle over bread.

ReplyDeleteWe love them all from the standard banana nut to making it Hawaiian fancy, all sorts of squash bread, carrot and raisin, and apple cinnamon are what comes to mind first.

DeleteFor once I will be glad to have my neighbor's gift of zucchini so I can give this recipe a try. Like my mom I often bake banana bread, though I have modified her recipe using more banana and less oil. Orange cranberry bread is another favorite around here.

I think you're right about the veggies adding moisture. I don't squeeze the zucchini, so it's very moist and the glaze helps to keep it moist, too.
