Lemon Poppy Seed Dump Cake #Recipe @PegCochran

  


Nothing beats a cake made from scratch.  They're delicious but let's face it, they are time consuming.  And you don't always have the time.  I wanted a dessert for Super Bowl Sunday but I didn't want to buy something from the grocery store and yet I didn't want to spend a lot of time making something either.  Solution? Dump cake!  Still delicious but the shortcut of starting with a box mix makes it quick and easy.  I added poppy seeds to the recipe because lemon + poppy seeds = delicious. 


1 box lemon cake mix

1 box instant lemon pudding mix

¼ cup freshly-squeezed lemon juice

½ cup vegetable oil

4 large eggs

1 ½ TBL Poppy seeds (optional)

 

Preheat your oven to 350 degrees.

Grease and flour your bundt pan really well. I used Crisco to grease mine.

Dump all the ingredients into the bowl of a mixer and mix for approximately two minutes. If using poppy seeds or some other add-in, fold into the batter now.
 




Pour batter into bundt pan and bake approximately 40 minutes or until golden brown on top and toothpick inserted comes out clean. 

Allow cake to cool for 10 minutes and then unmold.

Dust with powdered sugar if desired.

  3. For once I'm not the one spotting the omissions!
    This sounds like it would be a lovely companion to a cup of tea.
    You grease the bunt pan but don't flour it, too? Bunt cakes can be prone to sticking. This works OK?

    1. I did flour it. I should add that. Part of it stuck anyway but it was still delicious. And powdered sugar hides a lot of sins!
