MADDIE here, with the easiest recipe for an appetizer you can imagine!
I reveled in having some also fully vaccinated friends over last weekend, and I wanted an easy, quick appetizer to serve. I love tapenade, but I haven't resumed shopping at Trader Joes, any store of which is at least a half hour's drive from my house. And that's the only place I've ever bought a jar of the rich, olivey spread.
But while I was doing my shopping during the Market Basket six AM senior hour, I picked up a container of mixed pitted jumbo olives. I didn't have a recipe in mind. How hard could it be? After I got home, I did check one recipe book, which said to include either anchovies or tuna. I rejected both ideas. And following is what I came up with.
Maddie's Tapenade
Ingredients
1 ½ cups mixed green and black pitted olives
1 tablespoon olive oil
Juice of half a lemon
Directions
In a small food processor, grind
olives, olive oil, and lemon juice. Add more oil or lemon juice if it is too
thick.

(Apologies - I decided to document this dish after I made it. But really, it's so easy, what's there to see?)
Serve at room temperature on
crackers or toast. It also makes a delicious spread to add to a sandwich.

I have never eaten tapenade - thanks for sharing how you made yours. I wonder if it can be made with partly green olives as I prefer green to black.

My favorite dip is Velveeta and Rotel tomatoes. It's tomatoes and green chili's.

My husband and I love tapenade. I don't know why I haven't prepared some myself. I should plan on it for father's day. I really like hummus, too. What I really love but don't think I will ever make is chopped liver. A friend made a batch for me several years ago. It's so good. bluedawn95864 at gmail dot com
ReplyDeleteMy sister used to make wicked chopped liver using chicken livers, white wine, a bit of onion (this was a while ago and I'm pushing my brain for details!), dill, and lots of butter. After cooking everything together until the livers were done, she zipped it in a food processor. It was divine!
DeleteI do like tapenade, but I've always had it on a sandwich, never as an appetizer. I'm sure it's good used with crackers as an appetizer. I'll have to remember it when I need an appetizer to serve.

My favorite "dip" story: In high school we had a play rehearsal at my house. I made the ever popular onion dip (onion soup mix and mayo).

DeleteLove tapenade, but recently tasted a new dip that I love. When you are ready to head back to Trader Joe's, you can get the 3 ingredients ready to throw together. Meanwhile, I plan to try it the long way and prepare them myself. 1 package of precooked black lentils, a container of bruschetta mix, and feta cheese. Mix together and serve on rice crackers.

DeleteMy whole family are crazy for olives, and we've always had them on/in many dishes, like potato salad, topping deviled eggs, sandwiches and just eating them alone. I've made tapenade many times. One of the best versions dh and I ate was at Todd English's restaurant Olives in Las Vegas, spread on delicious bread, while sitting outside watching the Bellagio fountains! lola777_22 at hotmail dot com
