Hello from TINA KASHIAN! This rice dish is an absolute favorite with family and friends. Even picky eaters like it. It replaces plain, boiled rice as a side dish. It’s not hard to prepare, and you no longer have to buy rice packets for a flavorful side dish. This rice is a staple with Mediterranean dishes like shish kebab and grilled fish. The rice can also be substituted for bulgur (cracked wheat), but I’ll share that healthy recipe another day.
Ingredients:
1 cup of long grain rice
3 tablespoons butter
1 teaspoon extra virgin olive oil
½ cup fine egg noodles
2 cups chicken broth
Salt and pepper to taste
Directions:
Heat butter and oil in a two-quart saucepan over medium heat. Add the fine egg noodles and stir to coat. Cook about three minutes, stirring often. Butter will start to foam.
Sauté gently, stirring with
a spoon constantly until the noodles are evenly golden.
Add the rice and stir for one minute until rice evenly coated with butter and noddle mixture.
Add the chicken broth. Cover and bring to a boil, then
lower heat until rice is simmering.
Keep rice covered and let cook for ten minutes. Turn
off the burner, then leave saucepan on the burner for an additional ten
minutes. It’s tempting to lift the lid to check the rice, but you want to keep
it covered to fully cook. Once cooked, fluff rice with a fork. Add salt and pepper to taste. Pour rice into a serving dish and enjoy!

The recipe for Armenian Rice Pilaf sounds AMAZING! It's one I think even my "I don't like rice" hubby will give a try and like.

Green Bean & Shoepeg Corn Casserole
Serves 8
Ingredients
1 can French style green beans, drained
1 can white shoepeg corn, drained
1 can celery soup, undiluted
1 ½ cups grated Mild Cheddar
½ cup sour cream
½ cup chopped onion
1 can water chestnuts, finely chopped
1 roll or tube of Ritz crackers
1 stick of butter, melted
Spray casserole dish with non-stick spray.
Place drained green beans in casserole dish.
Top with drained shoepeg corn.
In bowl mix celery soup, cheddar cheese, sour cream, onions and water chestnuts until combined. Spoon on top of veggies in casserole dish.
Crumble crackers in bowl and drizzle with melted butter. Stir to coat crackers. Sprinkle over top of cheese mixture in casserole dish.
Bake in a 350 degree oven uncovered for 40 minutes.
NOTES: This goes great for a potluck dish. It’s great hot, warm, or room temperature. It never seems to make it to the refrigerator as leftovers but I’m sure it would reheat nicely too.
It's a super easy throw it all together type dish. It's great for potlucks and I'm always being asked for the recipe.

DeleteMy favorite side dish is a panfried medley of vegetables seasoned well and mixed into cooked quinoa. The variations are endless and depending on the vegetables, can be flavored with garlic, spices or viniagrette. And if one wants to make it into a meal, top with a fried egg.

ReplyDeleteMy favorite side dish Tomatoes with Garlic. It is a great accompaniment to meats, or when added to a salad; and it is so easy.
2 pints of cherry tomatoes
Boiling water
1/2 cup of extra virgin olive oil
2 Tbs. of red wine vinegar
2 cloves of finely minced garlic
Salt and pepper to taste
1 Tablespoon of freshly chopped parsley
Cover tomatoes with boiling water and let stand for 10-15 seconds.
Drain tomatoes quickly. When cool enough to handle, peel them by pulling the skin away with a pairing knife. It should come off easily.
Combine the remaining ingredients and pour over the tomatoes. Chill at least one hour before serving. This dish is especially pretty when a variety of colorful cherry tomatoes are used. My email is rrhartley112@gmail.com.

DeleteI am a roasted vegies girl! Red peppers (or yellow or orange), cauliflower, asparagus, mushrooms are among my favorites. Sometimes I throw in a few cherry tomatoes. About the only vegie I do not prefer roasted is broccoli. YUM! The Armenian Rice Pilaf sounds like one I have to try. Thanks!!

My favorite side is toasted veggies - asparagus, Brussels sprouts, mixed veggies like squash, onion, peppers that have marinated in a balsamic vinegar, oil and basil mixture.
