#Spicy Shrimp & Black Rice Bowls by Denise Swanson

 In the lull between New Years and Valentine's Day, I've been trying to get back to healthier habits. This yummy shrimp rice bowl gets a kick from red pepper flakes, but is reasonable low in calories. 

Don’t let that carrot-pickling liquid go to waste! I stir it into the cooked rice to really bump up the flavor. Add a couple of baked egg rolls and you have a tasty Saturday night meal.




  • 1 Package of instant rice (I used cilantro and lime flavored)
  • 1 cup carrot slivers
  • ¼ cup rice vinegar
  • 2 tablespoons  soy sauce, divided
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon ginger paste
  • 1 teaspoon light brown sugar
  • 2 tablespoons canola oil, divided
  • 4 cups thinly sliced mushrooms (8 ounces)
  • 4 cups lightly packed baby spinach
  • 1 pound raw shrimp peeled and deveined
  • 1 teaspoon red pepper flakes (I’ll probably cut this in half next time)

 

Microwave rice

Meanwhile, combine vinegar, 1 tablespoon soy sauce, sesame oil, ginger and sugar in a small saucepan; bring to a simmer. Add the carrot and stir to coat. Remove from heat. Cover and set aside while you prepare the rest of the dish.







Next, heat 1 tablespoon canola oil in a large nonstick skillet over medium-high heat. Add mushrooms and cook, stirring often, until tender, about 5 minutes. Add spinach and the remaining 1 tablespoon soy sauce and cook until wilted, about 30 seconds.






 Transfer to a bowl.









Pat shrimp dry and sprinkle with red pepper flakes Add the remaining 1 tablespoon oil to the pan. Add the shrimp and cook, stirring occasionally, until lightly browned and cooked through, 3 to 4 minutes.







Strain the carrot-soaking liquid into the rice.








 To serve, top the rice with the vegetables and shrimp.

     Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.

     Too bad, whoever killed her father, now wants Lexie dead as well.
