This delicious recipe comes from Mary Matthews of Michigan who let me use it in my sixth Cranberry Cove book, Berried Motives.
These cookies are to die for. I wasn't sure about the white chocolate since I am generally not a fan, but it works perfectly in this recipe. And with the bright red from the cranberries, I think these cookies would be festive enough for Christmas!
Ingredients:
3 cups all purpose, unsifted flour
1/2 teaspoon baking soda
1 teaspoon salt
Two 4-ounce white chocolate baking bars
1 1/2 cups dried cranberries
1 cup unsalted butter, softened
1 1/2 cups granulated white sugar
1 cup light brown sugar, firmly packed
2 extra large eggs, at room temperature
1 1/2 teaspoons orange extract
1/2 teaspoon vanilla extract
Directions:
Preheat oven to 350 degrees.
Place the flour and baking soda in a medium bowl. Using a spoon or whisk, blend the dry ingredients together and set aside.
Break or chop the white chocolate baking bars (using a serrated knife) into chunks onto a sheet of parchment paper. Slide the chocolate off the paper and into the flour mixture.
Add the dried cranberries and chopped chocolate to the flour mixture and lightly mix the ingredients until all cranberries and chocolate are coated with flour. Set aside.
Cream butter and sugars in a large bowl until fluffy. Add orange extract, eggs, and vanilla, and beat well.
Add the flour and cranberry/chocolate mixture to the butter, sugar and egg mixture and blend using a wooden spoon or stiff spatula. If dough appears too dry, add 1 tablespoon milk.
Either drop by spoonfuls, or lightly roll the dough into a rounded ball shape and place on an ungreased or parchment paper lined cookie sheet.
Bake at 350 degrees for 10-12 minutes. The size of the cookies will determine baking times. Larger cookies may need an additional 2 to 3 minutes.

ReplyDeleteWhite chocolate cranberry cookies are my husband's favorite! Orange goes great with cranberry, so definitely need to try this version.
