Celebrate Ringing in the New Year w/ Spiced Apple Pie Sundae w/ nuts #recipe & Farewell Book #Giveaway from author @DarylWoodGerber -

 Yes, it is my farewell. My swan song. Krista Davis exited the blog a few weeks ago, and like Krista, I have so much on my plate that it is time for me to bid farewell to the blog, as well. 

 This has been the most incredible 10+ years journey. If you read Krista's post, then you know the story. We started this blog with the idea of sharing recipes to entice foodies to find our books that featured culinary delights.With the original talents of Julie Hyzy, Jenn McKinlay, Elizabeth Spann Craig, and Cleo Coyle, we were able to make the blog sing. And it worked. The blog became a hit. Our fans are stalwart. Our guests are delicious.

Over the years we have added the incredible talents of Sheila Connolly, Mary Jane Maffini, Lucy Burdette, Vicki Delaney, Essie Lang, Peg Cochran, Denise Swanson, Leslie Budewitz, Maddie Day, Leslie Karst, and Maya Corrigan.

And in January you will be introduced to two new talents. Lucky you! 

Please know that I will miss you, but I will be back. I've already been told to expect to be a guest, and I will gladly and readily participate. Thank you, one and all, for being so supportive. It has meant the world to me.

Now...what do you serve for dessert for New Year's?  It has to be something luscious. Something extravagant. Something that pairs well with champagne. I found this recipe in Ventura Blvd., a magazine that I receive monthly. It features all sorts of stories about our neighborhood, but there are often recipes included, and the picture of this sundae had me at "hello." I had to make it and knew I would be sharing it with you.

Spiced Apple Pie Sundae with Macadamia Nuts

Inspired by recipe in Ventura Blvd. Magazine November 2020

 

Serves 4

 

3 tablespoons unsalted butter, divided

1 cup raw, unsalted macadamia nuts

4 apples, peeled, cored, and diced (Fuji, Jazz or Honeycrisp)

1/4 cup brandy (Courvoisier)

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cardamom

1/8 teaspoon ground nutmeg

3/4 teaspoon crushed pink peppercorns

3 tablespoons light brown sugar, divided

1 quart of vanilla ice cream

1 jar caramel sauce

 

Melt 1 tablespoon butter in large saucepan on medium-high. Add nuts and cook until light brown, about 2 minutes. Remove nuts from pan and cool.

 

Add apples to same pan and sauté until light golden brown, about 2-3 minutes. Add brandy to pan and reduce until almost dry, about 2-3 minutes.  Add 1 tablespoon butter and spices. Lower heat and cook until aromatic and apples are tender, about 5-7 minutes.  Add 1 tablespoon brown sugar and cook until dissolved and apples have a caramel color.  Remove from heat and cool.

 

Meanwhile, chop the nuts. In a small bowl, combine nuts with remaining brown sugar.

 

Set out 4 serving dishes.  Place some nut mixture in the bottom of each dish, reserving some for garnish.  Add scoops of ice cream. 

 

Spoon caramel sauce over ice cream and top with caramelized apples. Garnish with a sprinkle of nut mixture. 

 

BTW, if someone does not want their portion, simply wrap with saran and freeze. You can have seconds tomorrow.  But I bet you won't have to do that!  Heh-heh.

As for New Year’s Eve, I’ll be doing the same thing I do every year, stay home alone with my cats. This year I’m not even going to stay up to ring in the new year. Although I will say good riddance to 2020.

  4. We are sorry to see you go, but understand that life changes and that there are only so many hours in a day. Please know you will be missed.

    Oh my goodness, you got my taste buds at full attention and it's only 6:30 in the morning. The recipe for Spiced Apple Pie Sundae with Macadamia Nuts sounds to die for and would definitely make a New Year's celebration special even if for just the two of us.

    I had to post this in Pinterest in both giveaways and recipes because I know I will be making this one - and soon. It has just about all my favorites in the ingredients - the most versatile apple, caramel, ice cream, one of my favorite spices - cinnamon, and the most yummy and special (due to price) nut - the macadamia nut.

  5. I love Carmel sauce! Made some to go over brownies for Christmas. I like the macadamia nut version. May have to give that a try.
    We are staying in for New Year’s. Trying to keep the bad germs away. Seems like more and more people I know have been sick. We are older and can’t take the chance.

  29. We are in a province-wide lockdown for a month so my usual New Year's Day multi-course feast with my dad in Toronto cannot happen. Instead, I am trying a new recipe for Asian crispy duck with hoisin-scallion pancakes on New Year's. Plenty of leftovers for me.

We've been together a year but last year I was sick on NYE so we didn't spend it together. :) I'm looking forward to having another 3-day weekend with him this weekend.   42. Quiet evening with my spouse and the dogs. Fire going. Starters and perhaps enders of pate, cheese, olives and the like. Steak and veggies with a flourless chocolate cake. Bubbly chilling as I type. Probably not much different than usual. Next day Polish 'bigos', and we are having one friend over to share it. Cake will appear then as well.

  58. I will miss your blogs - plans for New Years Eve are playing games with sons family, eating snack type foods and having sparkling juice so the kids can toast too.
