Stuffed Tomatoes

 This recipe makes a great side dish if you are harvesting the last of the tomatoes in your garden or still finding some  luscious ones at the farmer's market.  It's very adaptable and is quick and easy.  And it looks quite elegant on the plate. This recipe can be increased or decreased according to your needs. 

Ingredients

Tomatoes (one tomato serves two people)
Bread crumbs or Panko (amount depends on number of tomatoes)
Shallots or green onions
Olive oil
Herbs of your choice
Parmesan cheese, grated
Salt & pepper to taste

Cut tomatoes in half horizontally.  Using a spoon, scoop out the interior pulp. Turn upside on a rack and allow to drain while you prepare the remaining ingredients.


 

Chop green onions or shallots (I used one shallot for one tomato).  If not already seasoned, season Panko or bread crumbs with herbs of your choice--oregano, basil, thyme, Italian seasoning, Herbes de Provence.

Add the shallots or green onions and the herbs of your choice and grated Parmesan* if using, to the breadcrumbs. I happened to have managed to grow some basil in a pot on the deck, which I chopped and added but fresh herbs are optional.)

Add enough olive oil to moisten the mixture. It should look like sand.

 
Stuff tomato halves with the mixtur
e, place in a baking dish and bake in a 350 degree oven for approximately 30 minutes.
 
 

 

*Parmesan can be added to breadcrumb mixture or sprinkled on top before baking.
