KAREN
The weather here in Texas has been pretty oppressive lately, and unfortunately, thanks to the current situation, a trip to Maine is out of the question. Although I write two series set in Maine—one in Snug Harbor, featuring bookseller Max Sayers, and another on Cranberry Island at the Gray Whale Inn, I’m currently stuck in Georgetown, Texas. So to remind me of tea on the lawn at Jordan Pond House), I made popovers!
If you’ve never been to Jordan Pond House,you should definitely put it on your list of things to do. It’s a delightful restaurant that’s actually a part of Acadia National Park — their specialty is tea and popovers on the lawn, overlooking the Bubbles (twin mountains) and serene Jordan Pond. (Last time we were there, we picked blueberries a little ways down from the lawn, and a few loons were calling in the middle of the lake).
One of my fondest Maine memories is sitting out on the lawn on a late summer day, the cool breeze blowing, the clinking of cups and saucers all around, the grass like a soft green carpet underfoot. Jordan Pond is laid out before you, bluer even than the sky, and a few gulls soar high among the white puffy clouds. Just when you think life can’t get any better, a kind waiter brings you a basket of popovers. Huge, light, and absolutely sublime with butter and strawberry jam… it’s heaven on earth. (And if you add a cup of lobster stew, it’s even better.)
I made them again the other night, and they were just as tasty as I remembered. Not all of my attempts have worked; there are a few tricks to making good popovers, so I’ll share them here.
1) Put them on the bottom rack of your oven (with room above for them to expand)
2) Use popover pans
3) Do not open the oven until the baking time is over.

Here’s the recipe I used — it’s right out of the Jordan Pond House Cookbook (which I highly recommend, as it includes recipes for lots of scrumptious dishes like Lobster Stew):
(For 8-12 popovers)
Four eggs
Two cups milk (I used 1 percent)
Two cups flour
One-half teaspoon salt
One-sixth teaspoon baking soda
(The cookbook recommends making the batter a day ahead of time, refrigerating it, and then letting it return to room temperature, but I skipped the day-before thing. I did, however, let it warm up to room temperature.)

Preheat oven to 450.
Break eggs into mixing bowl and whip; add milk and blend.
Add remaining ingredients and mix until almost smooth — do not overbeat.
Fill greased popover pans, muffin tins or custard cups 3/4 full. Bake for 14 minutes at 450, then reduce heat to 350 and bake 15 minutes more. (DO NOT OPEN OVEN UNTIL BAKING IS COMPLETE!) They’ll be crispy brown on the outside and moist on the inside at this point; remove them from the pans and serve with butter and strawberry preserves. (Jordan Pond House uses Stonewall brand — I looked in the gift shop.)

ReplyDeleteThank you for bringing up some sweet memories of our bucket list trip to Maine a few years back. We had always wanted to see the New England states in the fall with Maine our main destination. We spent two weeks going up the entire coastline staying at both the eastern and northern most points in the United States before turning to the interior part of the state. We loved the whole experience especially our time in Acadia National Park.

ReplyDeleteThen a few years ago the park service turned the restaurant over to another provider (a Mexican restaurant group) after years of consistent quality service from the original people.
Now we go to the Asticou Inn in Northeast Harbor on Mt. Desert. The original people from Jordan Pond are there and offer the familiar, wonderful popovers and stew. The setting is equally stunning and relaxing.
PS You can also get blueberry jam is you ask.

ReplyDeleteI have never made popovers from scratch but i did learn that a quick interpretation is to buy frozen rolls and put three together in cup of a muffin tin and when they are baked they form a pretty good imitation of a real popover.

ReplyDeleteMy daughter was supposed to get married in Bar Harbor this September, but because of the pandemic they postponed it to September, 2021. They had never been there before, but I have wanted to live in Maine for years. Just haven't had the chance. I wish I had my own Gray Whale Inn. One of the activities we planned for when we do get to go was a trip through Acadia, now I have to add popovers to the stop list! Thanks!

We were at Acadia last summer. Such an amazingly beautiful place to visit. Reading your blog makes me so sad that we didn't stop at the Jordan Pond House. We intended to but were over-ruled by kids who wanted to keep moving and check out more adventurous sites...oh well, I'll have to settle for some popovers using your recipe. I had my first popovers in Maine years ago, but I don't remember the name of the place. I do remember tons of wisteria blooming at the time as well, and the popovers were devise. I've never tried to make them so I think it is time while we are all quarantined.

ReplyDeleteOne of our local restaurants is well known for its popovers and at a bridal shower there years ago, a basket of hot popovers with strawberry butter came to the table. They were big and delicious and with a great meal to follow, we could only eat one. My cousin and I still laugh how she knew there would be extras and she pulled two plastic bags out of her pocketbook so we were able to enjoy popovers the next day. Hi Karen! I know I am going to love this series every bit as much as I have been loving the Gray Whale Inn Mystery series! Although I haven't baked in years, I am excited to try our new range: it has induction stove that Cajun hubby is just starting to get used to and loving it, true convection oven which I am getting ready to start baking, and also air frying capacity in oven! Now I can go through all the recipes I have been dying to try (first up is the Wicked Blueberry Coffee Cake) when I figure how to adjust the time.

ReplyDeleteI've only eaten one popover my whole life! At least that one was homemade. I've never seen them on the menu at any of the tea shops I've visited. Thanks for the recipe. If I ever get earning again, I'll find some popover pans and try it! Stay safe!

Maine is on the top of my list to visit & explore. I’ve always been drawn to go there. My fav mysteries are all based there. I have also had a desire to own a small Inn too. Love popovers but never made them. Thinking it’s time. Be a nice companion to my preserves that I can.

ReplyDeleteHi Karen. Popovers are definitely not a Newfoundland thing (that would be tea buns or raisin buns as we call then) but I sure will enjoy them. My husband and I were in Maine once but just went across the bridge from Campabello Island so we didn’t see a lot of the state that reminds me of my island home from your book descriptions. I have read all your books except A Killer Ending. I would love to win a copy. Thanks for the recipe and keep writing. Reading has been my main thing to do since the world went into shutdown. DeleteLove your Gray Whale Inn series! I have read the first two chapters of Max's story in Snug Harbor and cannot wait to read more. They will be every bit as good as Natalie's stories.

WELCOME, you did a wonderful cooking segment. I have not made a pop over this way. We call them turnovers, Maybe they are both different? Husband's taken over my kitchen SO.. I will have to be sure we have everything on hand & tell him it would mean a lot to me. He has successfully begun baking the last few weeks :-) a few tweaks here & there but. Golly he can do it. Muffin pans I have. Have not eaten since Sunday so These might be breakfast hahaa.
