Hi, everyone! Author Julie Moffett here. I hope everyone is surviving the quarantine. Thanks to the lovely ladies from the Mystery Lovers’ Kitchen for inviting me to submit a recipe. I am not a huge baker, but I do love my salads! So today, I’m going to share a recipe for one of my favorite salads. Chinese Chicken Salad.

Ingredients:


1 boneless, skinless chicken breast
2 tbs soy sauce
3 tsp oil (sesame oil is best, but if you don’t have it, any oil will do)
shredded lettuce
shredded red cabbage
grated carrots
shelled edamame (optional)
green onion, thinly chopped (optional)
avocado (optional)
1/4 cup chow mein noodles

For the Sesame Vinaigrette
1/4 cup rice vinegar
Garlic salt to taste (usually about ½ tsp) OR fresh pressed garlic
1 tsp. toasted sesame seeds OR 1 tbs of sesame oil
1 tsp. honey
1 tbs. soy sauce
1 tbs. olive oil

 Note: It’s common to use a 1:3 ratio of oil to vinegar in a recipe, but I like to play around with the     ratio for my dressing So feel free to adjust to taste, depending on whether 
you like it tangier or  sweeter.

Today, while I was making the salad and taking photos for this post, I realized I was out of rice vinegar. Yikes! I had to substitute what I had, which was malt vinegar. It changed the taste, but still turned out yummy. Regardless, I recommend using the rice vinegar instead of malt vinegar, but sometimes we have to make do with what we have.

Instructions:

Heat stovetop. In small fry pan add 3 tsp of oil (sesame oil is best, but any oil will do) and 2 tbs of soy sauce. Add chicken, stir and cook thoroughly. Set aside.




Assemble the salad. Place lettuce, red cabbage, shredded carrots, edamame, green onion, avocado and chicken on a plate. 



To make the vinaigrette, whisk together the rice wine vinegar, garlic salt (or pressed garlic), sesame oil (or seeds), honey and soy sauce in a small bowl. Pour sesame vinaigrette on top of the salad and gently toss to combine. Top with chow mein noodles and eat! Yum, yum!!!
