Baby Kale and Goat Cheese Tart by @DeniseSwanson


I love both goat cheese and kale so when I saw this recipe, I had to try it. Although it takes a bit longer than I usually like for a recipe, the hands-on time is actually pretty minimal. As a bonus, this savory tart recipe works for breakfast, lunch or a casual dinner.

FYI: My crust got a little browner than I wanted so watch yours better than I did. 😉

1 premade pie cruse
1/8 teaspoon salt
1 teaspoon ground white pepper
 1 small red onion, chopped
 3 cups packed chopped baby kale
 8 ounces goat cheese, divided
 3 large eggs





Using the directions on the package, bake piecrust until it is lightly brown. 
Meanwhile, heat 1 tablespoon oil in a large skillet over medium heat. Add onion and cook, stirring occasionally, until it is translucent, 6 to 10 minutes. 



Add kale and spoon salt; cook, stirring, until wilted, 30 seconds to 1 minute. 





Remove from heat and transfer half of the mixture to a medium bowl.
Crumble 1 ounce of the goat cheese and set aside. 

Combine the remaining 7 ounces of goat cheese, eggs and the pepper in a food processor or blender; process until smooth. 





Add to the vegetable mixture in the bowl and stir to combine. 






Pour into the baked crust. 








Sprinkle with the remaining vegetable mixture and goat cheese.





Bake the tart in a preheated 400 degrees F oven until a knife inserted in the center comes out clean, 18 to 22 minutes. Let cool for 5 minutes before serving.

     Too bad, whoever killed her father, now wants Lexie dead as well.
