Lemon Garlic Monkfish, plus #GIVEAWAY

While nobody in Murder at the Taffy Shop prepared this, Mac Almeida's boyfriend Tim might have. It's an easy and quick dinner. No monkfish? No worries! Use another firm fish.





















Lemon Garlic Monkfish

Serves 2

Ingredients

1 lb. monkfish fillets
2 tbsp. extra virgin olive oil
2 tbsp. lemon juice
2 cloves garlic, minced
2 tbsp. fresh dill
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
2 tbsp. butter
1 tbsp. capers



















Directions


In a small bowl, whisk olive oil, lemon juice, garlic, dill, salt, and freshly ground pepper together. 












Combine monkfish fillets with marinade in a sealable plastic bag. Refrigerate for at least 30 minutes.
















Preheat oven to 400 degrees. Heat butter in a cast-iron skillet over medium-high heat. 
















Pan-fry monkfish fillets along with marinade for five minutes on each side, or until the color turns from translucent white to solid white. Avoid browning by lowering the heat if necessary.




Place skillet with fillets in oven for ten minutes to seal flavors. Remove, top with capers, and serve with grains, legumes, pasta, or a vegetable medley.










I served it with orzo tossed in olive oil.

  2. My favorite seafood is oysters! But, I like most seafood. I don't think I have eaten monkfish, though.

  3. I like most seafood. When we’re out I usually order shrimp or calamari since my boyfriend can’t have shrimp and I’m the only one really likes calamari.

  4. Hubby and I love fish - fixed any way and any kind. Thanks for the delicious sounding recipe. We eat a lot of cod and the basic baked is what we fix the most. Love all kinds of seafood but have to say king crab is one of my favorites.

    Been fortunate enough to have read MURDER AT THE TAFFY SHOP and LOVED it. So not entering the contest. :) Whoever is the fortunate one that wins it, is definitely in for a treat.

  6. welcome. what a wonderful cover. i personally don't like fish. but my husband does. he likes tilapia grilled with lemon slices on top. he likes shrimp cold on salads and in things like Alfredo sauce over noodles. he likes fish tacos. you get the idea. but this one he may really love. i tend to make big batches and freeze them so he can pull out what he wants when he wants them. works for both of us.

  11. Sounds good. Always looking for another way to prepare fish. Favorites are salmon and tuna. Tilapia too but seems to be controversy about whether it's good or bad. Congrats on the upcoming release and thanks for the giveaway.

    Monkfish reminds of a classic Julia Child's show where she had a whole monkfish. It was gigantic! If I remember correctly she had quite an interaction with the fish.
