My mom really wanted me to have a good supper before I went out
trick or treating so that I wouldn’t just fill up on candy. Yes, she was an
eternal optimist. 😉
One of her tricks was making a “special” recipe that she didn’t
cook any other time but Halloween. I loved these savory pancakes and didn’t
realize until I was an adult just how easy they were to make.
My father worked afternoons and didn’t get home until midnight
so she reheated them for him by popping them in the toaster.
Ingredients
8 ounces andouille sausage, diced
1 15 oz. can fresh yellow
corn kernels
1 small can diced chilies
1 cup flour
1 teaspoon granulated sugar (I use sugar substitute)
3/4 teaspoon baking
powder
1/2 teaspoon baking soda
1 cup buttermilk
1 egg (I use egg
substitute)
2 tablespoons butter,
melted
Cooking spray
1/4 cup pure maple syrup
1 1/2 teaspoons adobo
sauce from canned chipotle peppers
Place sausage, corn, and chilies in a medium nonstick skillet
over medium-high. Cook, stirring often for 3 minutes. Remove from heat.
Combine flour, sugar, baking powder, and baking soda in a bowl,
stirring with a whisk. In a separate bowl, whisk together buttermilk and 1 egg.
Add buttermilk mixture and sausage mixture to flour mixture, mixing until just
incorporated. Gently stir in butter. Let stand 5 minutes.
Preheat an electric griddle to 350°F, or heat a nonstick skillet
over medium-high. Lightly grease griddle or skillet with cooking spray. Spoon
about 1/2 cup batter for each cake onto griddle. Gently spread into rounds
using back of spoon.
Cook until golden brown, 2 to 3 minutes on each side.
Remove from pan and keep warm, or follow freezing instructions.
In a small bowl, whisk together maple syrup and adobo sauce.
Drizzle syrup over corn cakes.
FREEZE: Cool cooked corn cakes completely. Wrap corn cakes
tightly in plastic wrap in stacks of 4 with parchment paper or plastic wrap
between each cake. Place in a large ziplock plastic freezer bag; seal and
freeze up to 2 months.
REHEAT: Toast frozen corn cakes in a toaster or in a toaster
oven on medium until heated through, 4 to 5 minutes.

Shield, she does believe her father was murdered—a father she never knew
existed, and she investigates his death.
Too bad, whoever killed her father, now wants Lexie dead as
well.
