Now that summer is in full swing, I always try to have a recipe ready for those days I don't want to heat up the house with the stove or oven. This recipe ticks all my boxes. It's no cook, fast to make (especially if you buy the pre-chopped/sliced/shredded veggies) and absolutely Delicious. Although the recipe says one per person, my hubs and I have two, but with no other side dish.
Ingredients
4 (8 inch) tortillas or wraps
1 cup prepared hummus
2 ounces shredded Cheddar cheese
1⅓ cups baby spinach
1 cup sliced red bell pepper
1 cup broccoli sprouts
1 cup thinly shredded red cabbage
1 cup julienned carrots
Green goddess dressing for serving
Spread each tortilla with ¼ cup hummus.
Top each with one-fourth
of the Cheddar, spinach, bell pepper, sprouts, cabbage and carrots.
Roll up
each wrap. Serve with dressing for dipping
