#Heartier and Healthier Mac and Cheese


I discovered this heartier and healthier version of mac and cheese, and then tweaked it a little more! I subbed ground turkey for ground beef and fire-roasted tomatoes for regular diced. Make sure to drain the tomatoes so the cheese sauce doesn’t get too thin. I use rotini and penne, but any short pasta shape will work. If you don’t have dry mustard (used here for added depth), stir in a teaspoon of Dijon mustard.




8 ounces uncooked rotini/penne (I use Dreamfields Low-Carb pasta)
 1 pound ground turkey
 1 chopped yellow onion
 1 TBSP Worcestershire sauce
 1 teaspoon dry mustard
 1 (14.5-oz.) can fire-roasted diced tomatoes, drained
 1 cup 1% low-fat milk
 1 1/2 teaspoons all-purpose flour
 3 ounces shredded fat-free cheddar cheese 
 3 tablespoons 1/3-less-fat cream cheese
Dried parsley
1/2 teaspoons salt
1/4 teaspoon black pepper

Cook pasta according to directions, omitting salt and fat. Drain.

Heat a large skillet over medium. Add turkey, onion, Worcestershire, and mustard; cook, stirring often, until meat is done, about 5 minutes. Transfer to a bowl; stir in tomatoes. Whisk together milk and flour. Pour mixture into skillet; bring to a boil over high. 
  






Add cheeses; stir until cheeses melt. Remove from heat. 












Stir in pasta and meat mixture. 














Top with parsley, salt, and pepper.

     Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.
     Too bad, whoever killed her father, now wants Lexie dead as well.

  1. I just made something like this. It called for chicken breast cut up. I use ground beef because that's what I had.
    Tasted quite good.
