The bad news is that my dishwasher retired a few weeks ago. The worse news is that my oven noticed that Mr. Dishwasher left and there's a new guy in town. Now Mr. Oven wants to retire, too. Oy.
People seem to think that everything I cook comes out without a hitch. Wrong. Oh, so wrong. Today I'm sharing my cheesecake squares. I'm not quite sure what went wrong. They're definitely edible but I think they baked too long. They're still creamy, so I can't complain about that but I have a feeling that Mr. Oven's timer was messing with me.
So here's the recipe, which I have not tried a second time. Seriously, how many cheesecake squares do I want at one time anyway? If you try it, let me know how it turns out.
You wouldn't think there would be many variations on graham cracker crusts. Today I was about to add brown sugar when it dawned on me that I was using cinnamon graham crackers anyway. They don't need more sugar! So it's the simplest crust ever.
Cheesecake Squares
8x8 baking pan
Bottom:
9 sheets cinnamon graham crackers
4 tablespoons melted butter
Preheat oven to 375.
Line the bottom of the baking pan with a strip of parchment paper. Pulse the graham crackers in a food processor until they are crumbs. While running, add the melted butter. Press into the bottom of the pan. Bake about 10 minutes and turn heat down to 325.
Cheesecake:
3 8-ounce packages cream cheese at room temperature
1/4 cup sour cream
2/3 cup sugar
3 eggs
1 tablespoon vanilla
2 teaspoons lemon juice
Beat the cream cheese with the sour cream and sugar. Add each egg and beat. Add the vanilla and the lemon juice and beat until smooth, scraping the sides as necessary. Pour into the cooled graham cracker bottom. Bake at 325 for 30-40 minutes. The middle will still jiggle a little bit.
Cool completely at room temperature. Refrigerate several hours or overnight before cutting.
Line the bottom with parchment paper. |
Combine ingredients. |

ReplyDeleteYou can replace the heating element in the oven. We've had to do that-its pretty simple. Well in most ovens that is unless you have one of those fancy types :) . The recipe looks great.
ReplyDeleteThank you for this yummy looking recipe. Oh no, Mr. Oven, it is not time to retire. When we were in TN last year at my nephews daughters wedding, our fridge of 32 years decided that retirement was happening. Thank goodness I had a friends son taking care of our cat and he noticed, so he and his mom took care of things. Now our washer and dryer of 32 years are getting the same idea. OHY. Life is exciting.

ReplyDeleteYum! Question - you say to lower the oven temp to 325 after baking the crust, but how long does the crust have to cool before you bake the filling? With lemon squares or pumpkin-pie squares, I just pour the filling on top of the hot crust and stick it right in to bake, but I've never made cheesecake before so I'm not sure if it would be a problem.

My stove is twenty-two years old & it's been fooling around with me & timing too! And one of the burners is thinking about going out. Having an oven with a mind of its own makes baking a challenge. The cheesecake recipe sounds really good. Thanks for sharing it.
