#Cherry Tomato & Garlic Pasta by @Denise Swanson


I have to admit that sometimes I try recipes that I don't think will be absolutely yummy. If they're easy, healthy, and/or I have all the ingredients, I figure good is good enough. But this easy and healthy pasta recipe really surprised me and it only takes 20 minutes! 


8 ounces penne pasta (I use Dreamfields Low=Carb Pasta) 
2 tablespoons olive oil
6 cloves garlic, minced
2 cups cherry tomatoes
2 medium yellow squash, halved and sliced ¼ inch thick
¾ teaspoon salt
1 cup chopped fresh basil
1 cup mini mozzarella balls 
¼ cup finely grated Parmesan cheese






Bring a large pot of water to a boil. Add pasta and cook according to package directions. Reserve ¼ cup cooking water, then drain the pasta and cover to keep warm.


While pasta is cooking, heat oil in a large nonstick skillet over medium-high heat. Add garlic, reduce heat to medium and cook, stirring, until it begins to soften and turn light golden, about 3 minutes. Add tomatoes, squash, and salt. Cook, stirring occasionally, until the squash softens and the tomatoes begin to burst, 4 to 5 minutes. Remove from heat.



Add the pasta and reserved cooking water to the pan along with basil and mozzarella. Toss to combine. 











Serve topped with Parmesan.

    1. I can't taste the difference. It is a bit more expensive, but I watch the sales. Also it is VERY important not to overcook it.
