A vacation on
Peach Cove Island, GA is unforgettable. You’ll arrive on the island by ferry
and before you hit one of the beautiful
beaches, The Peach Diner is a must visit. The tinkling of the door signals
your arrival to Marygene Brown and her staff. You’ll be greeted with southern
hospitality and the aroma of all the food being fried, scattered, or smothered.
Have a seat at one of the peach vinyl booths or at the counter. I recommend a
glass of peach tea and a potato waffle. Marygene perfected the waffle recipe when
her mama was alive. I must warn you though, there are rumors that her mama visits
the island foretelling deaths at the diner and instructing Marygene to get
involved. Some believe the tales other’s not so much. Just to be on the safe
side, you might want to avoid the chocolate mango beer cake. It is to die for….
The Peach Diner Potato Waffles
This is Marygene’s ultimate comfort food. It doesn’t matter what
she’s facing, a crispy, cheesy, potato waffle always lifts her spirits.
2 pounds
yellow or red potatoes, shredded and squeezed dry
3 tablespoons melted butter
1 cup shredded cheddar cheese, plus extra for garnish

¼ cup
diced onion
¼ tsp garlic powder
1½ teaspoons Himalayan salt or sea salt
½ teaspoon ground black pepper

¼ teaspoon
thyme
2 eggs, lightly beaten

½ pound
cooked and chopped bacon
¼ cup
chopped chives for garnish
Preheat
the waffle iron according to the manufacturer’s instructions. Spray the waffle
iron with cooking spray, if required.
After you
shred the potatoes, place in a strainer and sprinkle with a little salt and
leave for five minutes. It helps to release the liquid in the potatoes. Use a
dishtowel to squeeze dry.
Toss the
potatoes with butter, onions, salt, pepper, and thyme in a bowl until evenly coated.
Fold
beaten eggs into the potato mixture.
Spoon
some potato mixture onto the preheated waffle iron; cook until the potatoes are
tender and golden brown, 5 to 8 minutes or until nicely browned. Repeat with
the remaining potato mixture.

I have never heard of a potato waffle but this certainly sounds good! Adding it to a list of things to try. The same goes for this series. I am not familiar with it -sorry!- but would love to win a book. Either way adding to my book list. Love cozies!

Your book sounds very interesting and I’d honestly love to read it. Being a print book is great for me as I use a lighted magnifier so the print books are perfect. (So are books on CD and MP3)😉.
ReplyDeleteI love a lot of foods but always think back to my youth when my Mom would whip up a soup with an onion soup base using small pieces of hamburger and lots of hand crushed peeled and seeded tomatoes along with small pasta. It’s like three foods in one! And so tasty and comforting. You can also add other veggies to make it a hearty vegetable beef soup!
