Grilled Sweet Potatoes with Quinoa and Kale #recipe from Essie Lang

I had fun with this one. I’m still getting used to my new diet but this is a very flexible recipe and if any of the ingredients don’t get your taste buds salivating, then switch out with your own favorites.

I actually combined three recipes and used my own measurements, which gave me two servings. I’ll be enjoying the second one, cold, tonight. I think that will be just as tasty.


This is a versatile dish that combines well with to combine with trout, as I did, or any meat.


What you’ll need:

1 medium sweet potato
½ c. kale (I used frozen)
¼ c. chapped walnuts
¼ c. sunflower seeds
½ tsp. paprika
Crushed chili peppers to taste
1/4 c. mix of virgin olive oil and balsamic vinegar
Olive oil



What to do:

1.       In a saucepan, cook quinoa according to directions. Take about 15 minutes.

2.       Peel and slice sweet potato into ¼ inch pieces; brush olive oil and sprinkle with paprika; place on heated grill for approx.. 5 min. each side.



3.       In a skillet, heat olive oil then add walnuts, sunflower seeds, kale and crushed chili peppers. Saute for approx. 4 minutes or until kale is wilted. Add virgin olive oil and balsamic vinegar mix and stir.



4.       Add quinoa to skillet and mix together.


5.       Arrange sweet potato rings in a circle and add quinoa and kale mixture.

6.       Enjoy with a meat or fish of your choice.

  1. That does look good, and I'm glad to see you grilled the sweet potatoes. I'm always looking for a new way to serve kale. It's not my husband's favorite!!! What is your 'new diet'?
