#Speedy BBQ Chicken Tacos by @Denise Swanson



My husband aren't big fans of Mexican food, or at least we didn't think we were until we tried these. The filling is quick and easy to make speed and the taste is great. A dollop of zesty Greek yogurt on top is just what it needs to cut the sweetness of the BBQ sauce. These tacos are packed with protein and fiber and ready in less than 30 minutes.

2 teaspoons olive oil
1 red bell pepper, diced
1 sweet onion, diced
3/4 cup frozen whole kernel sweet corn, thawed
1 can (15 oz.) unsalted black beans, rinsed and drained
1 lb. skinless, boneless chicken breast, grilled and shredded
1/3 cup barbecue sauce
10 (6-in.) corn tortillas
1 cup Greek yogurt
1 tablespoons dried cilantro
1 tablespoon lime juice
 1/4 teaspoon salt
 
Heat oil in a large nonstick skillet over medium heat. Add bell pepper and onion and cook, stirring occasionally, until tender, 5 to 6 minutes. 









Stir in corn and black beans and cook 2 to 3 minutes until warmed through. 












Toss shredded chicken in barbecue sauce and add to vegetable mixture. Warm tortillas according to package directions. Place chicken and bell pepper mixture in center of each tortilla.




Place yogurt, cilantro, lime juice, and salt in a small bowl. Whisk to combine. Dollop each taco with yogurt mixture.
