LUCY BURDETTE: I’m pretty sure I got this recipe from Voraciously at the Washington Post, though I can't find it now. Have you seen this site? It’s fast meals that look and sound so delicious. This salmon was yummy enough that I've made it twice, once for a big birthday party. (And that might explain why my final dinner photo isn't the highest quality:).
And keep in mind that I don’t even love salmon, and yet I did love this dish!
Makes 4 skewers, serves 3+ people depending on what else you serve
¾ lb salmon, thick slab, skinned
1 tablespoon hoisin sauce (I use Joyce Chen brand, which is not as high in sodium and has fewer weird ingredients)
2 tsp Sriracha
1 tsp honey
1 navel orange
3 scallions
Mix the hoisin, Sriracha and honey in a large bowl. Cut the salmon into 2 inch cubes and stir into the sauce.
Peel the orange and cut it into six pieces. Ditto the scallions. Thread onto the skewers. Roast at 425 for 10 minutes.
Serve with green vegetable and salad or rice or you name it! (Sorry, this isn't the prettiest picture of the salmon...)
I love salmon though we don't eat it often. And if you are not a salmon lover but still loved the recipe, well that is recommendation enough to give this dish a try!
