As you can see, this is smoked salmon, not raw salmon. Delicious, but not what I was after for dinner. I think we ended up with pizza that night.
Then I found this recipe for a salad that called for exactly this type of smoked salmon (as opposed to the thin slices you get to put on bagels with cream cheese.) I thought it would make a good lunch to take to work. And it did. I thought it was delicious--different from the run of the mill types of salads I'm always making.
So if you find yourself with smoked salmon when you wanted raw salmon, give this a try! Or, you could even make it on purpose!
4 ounces. hot smoked salmon
1-15-ounce can black beans,
drained and rinsed
1/2 medium avocado, diced
1/2 cup cherry tomatoes, halved
1 tablespoon freshly squeezed lime
juice (from 1/2 medium lime)
1 teaspoon olive oil
1/4 teaspoon ground cumin
1/8 teaspoon kosher salt (optional)
1/4 cup or more chopped red onion to taste (optional)
1/4 cup or more chopped red onion to taste (optional)
Basically, flake the salmon into a bowl (it will flake very nicely.) Add the beans, avocado and cherry or grape tomatoes. (I added a bit of chopped red onion, too.)
Mix olive oil, lime juice, cumin and salt if using. (I thought it was salty enough without adding any but to each his own.)
Toss and serve chilled! You could even put it over a bed of lettuce for an attractive presentation. (I ate it out of the container I took it to work in.)
