I will admit this isn't so much a recipe as "instructions." I am always looking for ways to jazz up vegetables. Hubby doesn't love vegetables and would be happy if all he ever had to eat was corn, peas and maybe green beans (with plenty of butter.) He will eat asparagus with hollandaise but sometimes I feel like doing something different.
Then I found this idea for asparagus and bingo! I thought it might pass the taste test. I mean, everything is better with bacon, right?
Ingredients:
bacon
asparagus
Directions:
Prepare asparagus. I find if you snap off the ends, they break in just the right place to get rid of the woody part and keep the good part.
Season with salt and pepper. Drizzle with a little olive oil if desired. And light the grill for medium high--around 400 degrees.
Divide asparagus into even bundles and wrap with bacon. Secure with a toothpick. I found that regular bacon--as opposed to thick sliced--is easier to work with.
Grill until bacon is crispy and asparagus is tender. My stalks were rather thick so I grilled them for around 18 to 20 minutes. Adjust accordingly.
