Ingredients:
Chicken breasts -- quantity is up to you
olive oil
1 tomato
1/2 zucchini
1/2 green pepper
1 small red onion
Italian seasoning
shredded mozzarella
Chicken breasts are so LARGE these days that I took one whole breast and cut it into two pieces, which was more than enough for me and my husband. You may want more or less per person. Make approximately four or five cuts across the chicken breast being careful not to cut all the way through.
Cut the zucchini in half length-wise then slice into thin "half moons." Slice tomato and then cut slices in half. Cut the green pepper into strips. Slice the onion and then cut the slices in half.
Drizzle olive oil over the chicken breasts and in between the slits. Sprinkle with Italian seasoning if desired and salt and pepper to taste. Stuff each slit with the veggies--as many as you want or can fit in each slit.
Sprinkle with shredded mozzarella cheese. Bake at 400 degrees for 30 minutes or until chicken is done.
