Peach and Berry Parfait



Is it the lazy, hazy days of summer yet? I'm feeling lazy, and it's hotter than blazes. The last thing anyone wanted was to turn on the oven. But I had bought peaches! They were begging to be baked.

Nothing doing. So I went in search of peaches and cream recipes. Oh my. Turns out that with the exception of superstar chefs, peaches and cream are more simple than this dessert!


Peaches and Cream

Slice peaches and place in individual bowls. Sprinkle with a teaspoon or two of sugar, depending on hot sweet the peaches are. Add two teaspoons or so of cream (not whipped!). Voila! Peaches and cream.

But we like our cream whipped. So I abandoned that idea and went for a dessert for lazy, hot summer days. It's basically a parfait, so let's call it Peach and Berry Parfait.

Clearly, you can substitute whatever fresh fruits are in your fridge or on your counter. Peaches and berries lend themselves very well to this.

The sad thing is that there's absolutely nothing to making this. It's a super recipe for any beginner cook because you really can't go wrong! But it's unbelievably and wonderfully decadent!

Peach and Berry Parfait

1/2 peach per serving
berries (raspberries, blueberries, blackberries)
ice cream (any flavor) or Greek yogurt
Peach schnapps
sweetened whipped cream

There's no wrong way to do this. I started with ice cream in the bottom and added berries. More ice cream and peaches. Then the magic elixir—peach schnapps to taste (about 2 tablespoons). Top with heaping spoonfuls of whipped cream. Garnish with a berry and a slice of peach.


Whip cream with powdered sugar and a bit of vanilla.

Wash berries.

This one was made with chocolate ice cream. YUM!

  3. It's cool and humid with thunderstorms here! We've had extremes in both directions. No peaches yet, but I will save this FABULOUS recipe for when we have the fresh ones. August is always so hot here. Hugs and thanks, Krista.
