Welcome, Eva Gates!

Eva Gates’s Everything in A Pot Chicken

Talk about quick and easy and delicious. I love this on a cold winter night. The recipe isn’t really a recipe, just a guideline for things you can use. Adjust amounts according to how many people you have to feed. I always make at least enough for two meals as it keeps well in the fridge for a few days. The amounts here are for two people

4 chicken thighs

2 large potatoes

2 large sweet potatoes

1 onion

4 cloves garlic

1 tbsp. chipotle chilli powder (or ordinary chilli powder)

1 tbsp. ground cumin

1 tbsp. dried thyme

1 tsp ground coriander seeds

2 tbsp. olive oil


Mix the chipotle chilli powder, cumin, thyme, and coriander in a small bowl.

Remove skin from thighs and season with salt and pepper

Peel sweet potatoes and potatoes (skin can be left on the regular potatoes if you like) and chop into chunks

Peel and slice onion into thick slices

Peel and roughly chop garlic

Place vegetables and chicken in roasting pan

Drizzle with olive oil

Sprinkle spice mixture on vegetables and chicken and toss well

Arrange so that chicken pieces are on top of vegetables

Roast at 350 for 45 minutes to 1 hour, depending on how well done you like the vegetables. Toss once during cooking time.

Other vegetables could be parsnips, carrots, or winter squash. I even like a couple of large tomatoes, quartered.

  26. First I want to tell you thanks so much for the easy making dinner hubby will be making that this week for us. It looks so good and he loves leftovers as my mom and I go out on Wed for dinner then we go to her house and do crafts. I am disabled so she also helps me on any sewing etc . Second love lighthouses used to live in Ca. and going down Hwy 1 was so neat to see the lighthouses. I lived in Half Moon Bay and we could hear the horn and loved the ocean. Also this is going to be added to my list of TBR in print thank you for the time and the wonderful recipe. My mom(who is actually) a good friend will also love it as she is a widow.
