One of my friends doesn't even bother cooking the tomatoes. She chops them fresh, adds the other goodies like spices and chopped onion, and serves it over pasta. It's nice and summery! But this looks delish. I just bought Roma tomatoes for a dish I'm making.

ReplyDeleteYou could thin it with a bit of broth and/or milk and have soup.
Take some of the wonderful cheeses you write about and make grilled cheese sandwiches to go with the soup!
Oh, Libby, I've done that. I LOVE grilled cheese with soup. Great idea about how to thin it out. :)

Thank you for sharing! I've always shied away from making my own sauce, partly because of the skins, and partly because I've never wanted to take the time to try it. A jar is always easier. But this, I might actually try!
