LUCY BURDETTE: Ruh-oh, your husband invited company for lunch but there's not a cold cut or a can of tuna to be had in the fridge or the larder. He's in the dog house for sure...
Not to worry--yummy egg salad to the rescue! (This recipe makes 3-4 sandwiches, depending on how high you heap the filling.)
Ingredients
4 hard-boiled eggs
8-10 stuffed olives
1 heaping tablespoon fresh dill
1 heaping tablespoon mayonnaise
1 teaspoon Dijon mustard
Bring water with eggs to boil, turn this down to a simmer and cook for 10 minutes. Cool the eggs in the same pan.
Meanwhile, slice the olives, and snip the dill.
Peel and halve the eggs and place them in a bowl with the olives and dill.
Mash with a pastry cutter until you like the texture.
Mix in mayo and mustard, add a couple twists of fresh black pepper. Serve on toast with a little salad or some fruit on the side for garnish.
Voila! Everybody's happy and it even looks like you were expecting them:).

What a relief! I was afraid Tonka was in the doghouse from stealing the food.

Oh no Libby, Tonka's never stolen anything. Unless you count the cheese ball that we stupidly left at dog-eye level on the coffee table when we went in to dinner:)

My mother-in-law made egg salad; first I'd ever eaten. Hers was so good, and mine was never quite as tasty. It's been a long time since I've made egg salad. Think that's going to be remedied soon -- and I'll add olives. Thanks.
