From Victoria Abbott
As summer continues, there’s still time for casual outdoor dining
and for picnics. We love picnics and MJ
found this little dish many years ago in England. Lately we have been pining away for these great little frittatas and found the scribbled recipe. They can be eaten
warm or at room temperature and are easy to pack for a picnic.
We first made them when we lived in England, but it all
works very well here too. Of course, we’ve
tweaked them. They lend themselves to
tweaking. There are only five ingredients and you can mix and match whatever
you’d like to put in them. We couldn’t
wait for a picnic but we enjoyed a casual meal in the screened porch where the
frittatas hit the spot.
You will need:
4 oz smoked salmon, chopped fine
3-4 oz crumbled goat cheese
2 green onions, white and green, sliced fine and sautéed in
a bit of butter OR chopped fresh chives
6 eggs, room temperature
¼ cup light cream (5 %)
The smoked salmon is salty, so we didn’t even add S & P,
but you could.
All you do is:
Preheat your oven to 400 F.
Grease a 12-cup muffin tin.
Divide the cooked great onion, smoked salmon and goat cheese
equally in the twelve cups.
Beat the eggs until nice and yellow and then blend in the
cream.
Pour over the cups, trying to keep them equal.
Bake for 8- 10 minutes.
Cool on a cookie rack if serving at room temperature. We ate them nice and piping hot, but they’re
good either way.
We think they would have been great with a dollop of sour
cream added to the plate and I’ll report back on that. You could also vary the fillings with cooked
mushrooms, prosciutto, different cheeses –whatever flavors you like with eggs.
There are only three weeks left until The Wolfe Widow hits
the stands and the e-readers.
We're happy about that and we'd like to do something for you.

Don't you just love eggs? They're so good, and there are so many wonderful ways to cook them. This dish would be great to start ahead of time for Christmas morning, or when you have houseguests, too.

I do love eggs, Karen! You're right - this would be an easy start for Christmas morning. Duly noted.

ReplyDeleteFrittatas are lovely and I have enjoyed them but mini is even better. Great book. elliotbencan(at)hotmail(dot)com
ReplyDeleteThis recipe sounds delicious. I make a Spanish tortilla which is another version of a frittata, but mini frittatas would be great. I am re-reading The Christie Curse so I can read The Sayers Swindle to be ready for The Wolfe Widow :-). Pep the Pug and hubby noticed Walter on the cover of The Christie Curse while I was reading - like Pep without the gray!
ReplyDeleteI really like the idea of individual fritattas. What a great idea. These look tasty.

These look so cute and yummy too. One of my grandsons and one of my granddaughters love salmon best of all foods. Will definitely make these for a family occasion.
ReplyDeleteWhat a marvelous idea. There is something that is so appealing about miniature foods. Maybe it's psychological and we think we're eating less?
ReplyDeleteWhatever.
These look delicious.
I love these! They're great cold, too, and the leftovers are fabulous for meals in a hurry!
ReplyDeleteI love these little goodies. I make them, too, with a few different ingredients. So easy and yummy!
ReplyDeleteCan't wait for Wolfe Widow. Love the title.

These would be good for a brunch.
ReplyDeleteLove the cover then I had to double check, the Pug looked like only half a Pug! Still a great cover. Looking forward to reading more of the series.

I don't eat any kind of seafood, (had food poisoning in my 20's), so I believe that I will try these with something else besides, salmon, but I can't wait to try them. I will start experimenting tomorrow! :)
ReplyDeleteSounds yummy. Will have to try. kaye.killgore@comcast.net

ReplyDeleteThe frittatas look great. I've never had goat cheese, but they should be simple to change to your favorite meat and cheeses. Thanks for the giveaway.

we have our own chickens so we eat lots of eggs. Frittatas are a fave. I like this recipe. We ususally add spinach and tomatoes in ours. keep the recipes coming! mardox@consolidated.net
ReplyDeleteGreat recipe. Would go great with a cup of coffee in a pug mug
ReplyDeleteSounds so yummy. Whenever I see green onions/scallions I think of my Mom. She would trim the roots and part of the green off and put them in a glass at her place at the dinner table and just pull one out at a time and eat it along with dinner.
ReplyDeleteLove the mug as well and am looking forward to the book!
I made these for my son, nephew, and niece yesterday. They loved them. Thanks for a different Sunday breakfast.
