I had family around for quite a while after the holidays, and as always happens, the refrigerator kept getting stocked with veggies, and then we'd eat out or bring something in, and the veggies would be piling up! What to do?
Well, while I'm heavily on my Say Cheese! kick to promote DAYS OF WINE AND ROQUEFORT, of course I think about what I could make and add cheese!
Two years ago, in one of my blogs I wrote: "Life is good; cheese makes it better." ~ Avery Aames (The quote has been picked up and shared by a number of news and cheese sites!)
So I decided to make a stir fry with all the veggies in the drawer and add cheese. Voila! Delish. We served it with a meatloaf that was scrumptious, a recipe I'll be sharing next month when I'm focusing on recipes from cookbooks, because we found that recipe in a Disney Cookbook. Fun!

STIR-FRIED POTATOES
and ONIONS and CHEESE
and ONIONS and CHEESE
Ingredients:
(serves 6)
4-5 red potatoes, cut into 8-10 pieces each
6 green onions, diced
1 large yellow onion, diced
1 large scallion, diced
2 zucchini, diced
4 mushrooms, hulls removed, heads diced
4 tablespoons oil
½ cup to 1 cup Parmesan cheese
Directions:
In a large saucepan, heat the oil over medium high heat. Toss in
the green onions, yellow onions, and scallions, and sauté for about 5 minutes.
Add the potatoes and sauté for about 15-20 minutes. Remember to stir and scrape
any portions off the bottom of the pan.
Add the zucchini and mushrooms and stir. Then cover for about 5
minutes. Remove the cover, stir again.
Divide onto plates and top with plenty of Parmesan cheese.

We had ham for Christmas and it made for good nibbling afterwards. This stir-fry would have been a good accompaniment.

I saw the title and was so excited! FINALLY! And old German recipe I grew up with....!! I like the additions......never thought of doing that..we were always onions and potatoes...I always seem to do veggies..like what you have listed..but potatoes and onions were on their own....! Don't tell Granny!! LOL!!

Looks yummy, leave out the mushrooms and I am in. I make one similar to this with chicken, rice, red, green, and yellow bell peppers and cheese. I actually cook everything and the last few minutes will melt cheese in the mixture and then plate and add a little extra cheese to top Will try your recipe thanks
ReplyDeleteYou can always leave out mushrooms. I used to use mushrooms as a side dish (like a potato) but then I started having a reaction to them, so now I only use them occasionally. Chicken rice and cheese. Yum! (Leave out the peppers LOL Aren't we a pair?)

This sounds tasty. We didn't have anyone over because we have a big ol' dog that really doesn't like company. No special recipes in our house. My son does the cooking and, every time he makes something, it is different. At least I don't have to cook.

We don't have any family near us so I'm just cooking for the hubby and me. Since he likes potatoes fixed just about any way, I'll have to try this recipe. My go-to dinner is baked fish, with sides of brown rice and veggies.
