The holidays can be crazy! There's so much to do over the next few weeks and you'll probably have guests or plan to attend a holiday party. If you need a delicious, easy-to-make dessert to serve to your friends or family or to present as a hostess gift, then this crustless tart is the way to go. It's so easy that my male sous chef helped out this time.
What's your favorite super easy dish to make during this hectic, but wonderfully magical time of year?
Ingredients:
1 cup
all-purpose flour
1/4 teaspoon salt
1 cup
white sugar
2 cups
fresh cranberries
1/2 cup
chopped pecans
2 eggs
¼
teaspoon pure almond extract
¾
teaspoon pure vanilla extract
½
teaspoon cinnamon
¼
teaspoon ground cloves
Directions:
Preheat oven to 350 degrees. Grease one 9-inch pie pan.
Combine the flour, sugar, and salt. Stir in the cranberries and
the pecans, and toss to
coat. Stir in the butter, beaten eggs, vanilla
and almond extracts. Add cinnamon and
cloves. Spread the batter into
the prepared pan. It will look more like cake batter than pie
filling. Bake
at 350 degrees for 40-45 minutes, or until a wooden pick inserted near
the
center comes out clean. Serve warm. A scoop of vanilla ice cream or
real whipped cream tastes great on this pie.

This is just what I needed. Having friends over for dinner and want to keep it easy and casual. This will be the perfect dessert! I even have some cranberries on hand!
ReplyDeleteThat looks so yummy!! And I have all of the ingredients on hand.
ReplyDeleteI can't wait to try this one. Does other fruit work?
ReplyDeleteOh, yum! Sort of like a coffee cake in a pie dish. Very clever! Love quick and easy recipes like this one.

Mine is cooling on the table right this minute! Looks delish. Will serve to company tonight.
ReplyDeleteWell, we had this tonight and it was delicious! Super easy to make, and my one guest who DOES NOT LIKE CRANBERRIES, had three pieces!! Kudos to Ellery for a great recipe!
ReplyDeleteEllery, this sounds and looks so good. I'm going to make this, but the first time I bake it I'll use my daughter's cranberry sauce instead of fresh cranberries, only because I want to use it up. I have a feeling that it will be great since her sauce is delicious.
ReplyDeleteHow much salt do you use? I keep rereading the recipe, but don't see the amount.
Your sous chef looks to be very able.
How much salt?
ReplyDelete1/4 teaspoon salt!
