Super Easy Crustless Cranberry Tart

The holidays can be crazy! There's so much to do over the next few weeks and you'll probably have guests or plan to attend a holiday party. If you need a delicious, easy-to-make dessert to serve to your friends or family or to present as a hostess gift, then this crustless tart is the way to go. It's so easy that my male sous chef helped out this time.

Charmed No Crust Cranberry Pecan Tart

Ingredients:

1 cup all-purpose flour
1/4 teaspoon salt
1 cup white sugar
2 cups fresh cranberries
1/2 cup chopped pecans
1/2 cup butter, melted
2 eggs
¼ teaspoon pure almond extract
¾ teaspoon pure vanilla extract
½ teaspoon cinnamon
¼ teaspoon ground cloves

 Directions:
  Preheat oven to 350 degrees. Grease one 9-inch pie pan.
  Combine the flour, sugar, and salt. Stir in the cranberries and the pecans, and toss to                 
  coat. Stir in the butter, beaten eggs, vanilla and almond extracts. Add cinnamon and        
  cloves. Spread the batter into the prepared pan. It will look more like cake batter than pie    
  filling. Bake at 350 degrees for 40-45 minutes, or until a wooden pick inserted near the  
  center comes out clean. Serve warm. A scoop of vanilla ice cream or real whipped cream tastes great on this pie.

  7. Well, we had this tonight and it was delicious! Super easy to make, and my one guest who DOES NOT LIKE CRANBERRIES, had three pieces!! Kudos to Ellery for a great recipe!

  8. Ellery, this sounds and looks so good. I'm going to make this, but the first time I bake it I'll use my daughter's cranberry sauce instead of fresh cranberries, only because I want to use it up. I have a feeling that it will be great since her sauce is delicious.
    How much salt do you use? I keep rereading the recipe, but don't see the amount.
    Your sous chef looks to be very able.
