And this recipe for PUMPKIN SPICE SOUL CAKES is one of my favorites. It's my tasty twist on an old tradition...
My husband and I will devour these Pumpkin Spice Soul Cakes warm for breakfast, like pumpkin muffin tops, smeared with butter or cream cheese. Or we'll sandwich them together for dessert to make "soul cake whoopie pies" using fillings like cream cheese frosting; marshmallow creme; and even vanilla buttercream flavored with pumpkin spice.

LESLIE BUDEWITZ: Oh, I loved the Great Pumpkin, too, Cleo! Linus and his unfailing optimism is such a hopeful image for kids of all ages.
I'm a big fan of pumpkin in just about anything, except my lattes! I love the Pumpkin Pie Spices in coffee (and so many other things). I created this recipe for Fresca in my Food Lovers' Village mysteries, and then when I created the Spice Shop mysteries, well, Pepper, the shop owner, claimed it for herself! But the pumpkin? I have better uses for it! These Pumpkin Drop Scones are easy-peasy and yummy-pummy! (I just made that up.) This Pumpkin Ginger Mousse is light and full of flavor, as if the pumpkin could float!
Ginger and pumpkin are such a wonderful combo that we also love in this Ginger Pumpkin Apple Soup. I've apparently never shared the Cranberry Pumpkin Muffins we call Christmas Muffins but that are good all year round -- there's usually a stash in our freezer. I promise to take care of that soon!
And watch for my Pumpkin Spice Cake with Warm Caramel sauce from Murder in the Graveyard coming this Tuesday!

I grew up with my mother using canned Libby's pumpkin to make two pies for the holiday. After growing and baking my own pumpkins, I have reverted to the contents of cans for my pies. And in those pies is the only place pumpkin spice belongs. I'm an adamant purist about this, with no apologies! Following my grandmother Ruth, I almost double the cinnamon, cloves, ginger, nutmeg, and allspice in the recipe on the can.

LESLIE KARST: My favorite pumpkin that I ever carved was this one of my Jack Russell terror--I mean, terrier--Ziggy. I had a photo of her playing rough, which I transformed into a pumpkin-carving template on my computer. Came out pretty scary, no?As for recipes, one of my favorites is this one for Pumpkin Soup with Brown Butter and Toasted Pumpkin Seeds. It's scrumptious!

VICKI DELANY: I searched the MLK database so see if I’d
ever posted a recipe with pumpkin and I came up empty. Which wasn’t a surprise
as I can’t think of anything I make with pumpkin. Even pumpkin pie isn’t my favourite. But I am
very fond of squash and sweet potatoes and as it happens today, I’m making a
huge batch of my Harvest Squash Soup. It’s
sort of a non-recipe, something I’ve made so many times I know to just throw in
what I have in the way of vegetables straight from the farm stand – always butternut
squash, sweet potatoes, and potatoes. I
make it with a good amount of curry power and other spices to produce a
flavourful soup that freezes very well to enjoy over the winter months.
VMBURNS: Time for a confession. I don't like pumpkin. The only pumpkin recipe I have is for dog treats. My dogs aren't exactly food connoisseurs. Although, they have their likes and dislikes. My concern with the pumpkin dog biscuits was that IF they didn't like it, clean up would NOT be fun. Fortunately, my poodles LOVE pumpkin dog biscuits. So, when I want to spoil the poodles, that's what they get.

PEG COCHRAN/MARGARET LOUDON: I'm a late bloomer when it comes to pumpkin pie or anything pumpkin for that matter. My parents never served pumpkin pie at Thanksgiving but I discovered it when my mother-in-law served a pumpkin chiffon pie. Ever since, I've put pumpkin in lots of things including biscuits for my dog! I particularly love pumpkin in muffins like these pumpkin streusel muffins. These pumpkin snickerdoodle bars were also a hit. I've never tried the ubiquitous pumpkin spice lattes but maybe this year!
When we reached the field, we’d scatter through the scratchy vines, cutting the pumpkins loose with knives we were way too young to be using. We loaded the wagon until it was stacked high, then walked along behind the tractor as it pulled the heavy load back to the farmer’s roadside stand.
There, we sorted and stacked the pumpkins, and when the work was done, the farmer fed us and handed out cold sodas. There was nothing better.

Today, I like pumpkin anything. Last year I tried making pumpkin butter, and it was easy and delicious—perfect on toast or really on anything you’d put a spread on. I plan to make it again soon and share the recipe, but for now, here’s my recipe for fried pumpkin flowers.

Roasted pumpkin is delicious--a lot like butternut squash, but a little sweeter and more tender--and stuffing it with sausage and rice sounds divine, Deana!

ReplyDeleteLove “It’s the Great Pumpkin, Charlie Brown”! Maybe it’s remembering a wonderful childhood or just being a kid at heart, but we still watch for it’s showing on TV every Halloween.
ReplyDeleteOne of my memories of Halloween was the year I wore a hotdog costume. It was the one and only bought costumes I every had. Why a hotdog? I can’t remember. Was it the last costume? Was it on sale? We will never know. I can remember being so proud and wearing it, but I can also remember being happy afterwards to going back to making my own costume (with Mom’s help).
Right there with you Edith – almost. Pies are usually the only way I bake with pumpkin unless someone puts in a special request. I’m not against trying a bit if somewhere else and it’s being served. However, asking for the recipe isn’t something I usually do.
My mom always made pumpkin pies for Thanksgiving and Christmas. I can remember the year she changed things up with Praline Pumpkin Pie. Ever since, it’s been my favorite pumpkin pie. This is the recipe.
PRALINE PUMPKIN PIE
Ingredients
1/3 cup Pecans, finely chopped
1/3 cup Brown sugar, packed
3 tablespoons Butter
3 Eggs
½ cup Sugar
½ cup Brown sugar, packed
2 tablespoons Flour
¾ teaspoon Salt
¾ teaspoon Cinnamon
½ teaspoon Ginger
¼ teaspoon Cloves
¼ teaspoon Mace
1 ½ cup Pumpkin
1 ½ cup light cream
1 unbaked pie crust
Direction
Combine butter, pecans and 1/3 cup packed brown sugar. Press into the bottom of the unbaked pie crust. Prink sides of crust. Cook in 450 degree oven for 10 minutes. Cook at least 2 minutes before filling with pumpkin filling.
Pumpkin filling –
Combine eggs, sugar, ½ packed brown sugar, flour, salt cinnamon, ginger cloves, mace, pumpkin and light cream. Still until smooth and blended. Pour over slightly cooled pie crust. Bake in 350 degree oven for 50 to 60 minutes testing pumpkin for knife to come out clean. Cool before cutting into slices.

ReplyDeleteI've always watched Great Pumpkin every year. My mom is a big Snoopy fan so we grew up watching every time one was on. I like pumpkin desserts- pie, bars, muffins, cookies. Not a big fan of it as a savory dish. Of course anything I make with pumpkin, my cat loves getting a spoonful of plain pumpkin saved for her. Once I gave her some while we were pet sitting my sister's cats. One of her cats came running up all excited about a treat, looked at the bowl skeptically, sniffed the scoop of pumpkin, poked it with a paw and immediately shook his foot and walked off looking confused and disappointed. Apparently he wasn't impressed.

ReplyDeleteWatching It's the Great Pumpkin Charlie Brown was always a thrill. It first aired in 1966. I have great memories of carving jack o lanterns with the kids. All those pumpkin guts! Sometimes we roasted the pumpkin seeds after a carving session.

DeleteFunny, while I love pumpkin breads, muffins, cakes, cheesecake and soups, I do not care particularly for pumpkin pie and I loath that flavor in my coffee. My favorite thing about Halloween is the little ones in their costumes. I totally enjoy seeing them.
ReplyDeleteMy favorite way to use pumpkin is to make the pie filling recipe (on the Libby's can), pour it into a casserole dish (no crust) and bake like you would the pie. You have pumpkin pudding - great with ice cream or whipped cream. Another favorite is to take some pumpkin, mix it with a box of vanilla pudding and add whipped cream to make a pumpkin dip.

ReplyDeleteMy mother roasted the seeds, too. So good! My husband had never had them, but he loved them when I roasted them for him. Now he's the one who roasts them and our son roasts seeds for his children. A tasty tradition.

ReplyDeleteI am not much of a baker but I am excellent at buying delicious goodies. My local dairy farm has an excellent bakery. I picked up the first pumpkin pie of the season on Friday. The first bite of pumpkin pie is always the best! It is not Halloween until we watch The Great Pumpkin. Growing up, I don’t remember what my costumes were, I just remember that they were store bought and the masks were very awkward and very sweaty, lol! Diedraw@earthlink.net
ReplyDeleteReading this post brought back so many memories. As I was copying the recipes my daughter came in. "Mom!! Not more!!! We'd have to live for eternity if we were to try all those recipes you've collected" Telling her I did not collect the soup ones did not appease her a bit. We watch the Great Pumpkin every year. And I love collecting pumpkin recipes. When I can't find pumpkin I use sweet potatoes. Which has happened only once in the past 50 years. And I have watched "The Great Pumpkin" since it came out. And when my kids were born we watched "The Great Pumpkin" together. My sons, both in mid to late 50's insist they are too old for watching it. My daughter (52) watches it with me. Peg's pumpkin snickerdoodle bars are going to be baked first thing tomorrow. Always loved snickerdoodles, can't wait to try the pumpkin variety. I should change my name to Peter, so I could be known as Peter Pumpkin Eater :-) I love Pumpkin Spice Lattes, and never get enough, because I have plenty of cofee at home. To solve that i buy Pumpkin creamers and enjoy with my espressos in the morning in the Fall. In addition to pies, I will try some of your most intriguing recipes, so I am printing as many as I can and making them. ReplyDeleteI'm not a big fan of pumpkin but love anything apple, especially apple cider doughnuts. I spent more time than I care to admit looking for them last year. Halloween is so much fun, especially now that I go trick or treating with my grandchildren.

More often than not they are still in the cupboard for the next year. However, I do like pumpkin chocolate chip bread. I don’t have a recipe handy.
