Creamy Butternut Squash Pasta from Vicki Delany

 If you’re like me, you over-bought autumn vegetables and are now looking for a way to use up the abundance. I love butternut squash and make lots of soups and curries with it which I pop in the freezer for the cold winter months. This recipe is a bit unusual, but it’s great. I would not suggest freezing it though as I don’t think the cream would stand up to the freezer.

 


Creamy Butternut Squash Pasta

Ingredients:

2 tablespoons olive oil

4 cloves garlic minced

1 teaspoon fresh thyme

½ teaspoon red pepper flakes

salt and pepper

5 cups chopped butternut squash 

 1 ½ cups chicken stock

500 grams Penne

1 cup half and half cream

½ cup grated parmesan cheese

 

Instructions: 

Place olive oil, garlic, thyme and red pepper flakes, in large deep pot, and sauté until fragrant.

Add the chopped butternut squash and stir until coated.

Add the chicken stock and cover. Let simmer for about 15-20 minutes, or until the butternut squash is soft.

Meanwhile cook pasta according to package directions.

When the butternut squash is soft, turn off the heat under the skillet and allow it to sit uncovered for a few minutes.

Add the cream and parmesan, stir well, and puree with an immersion blender until the sauce is silky smooth

Drain the pasta and add it to the squash, tossing it well in the sauce to coat. 

Serve immediately.

Butternut Squash Pasta with Garlic, Sage, and Goat Cheese from @Mystery MacRae

 


This is a simple pasta dish with a lot of warm flavors. If you’d rather, you can steam the squash cubes, but we think roasting them adds depth to the dish. A bit of goat cheese finishes it off perfectly.

 

Butternut Squash Pasta with Garlic, Sage, and Goat Cheese

Adapted from Pasta e Verdura, by Jack Bishop

 

Goat cheese is missing! 

Ingredients

1 to 1-1/2 pounds butternut squash (about 3 cups when cut into ½-inch cubes)

3 tablespoons olive oil, divided

3 tablespoons unsalted butter, divided

4-6 cloves garlic, minced

12 large fresh sage leaves, shredded (or equivalent dried)

1 ¼ teaspoon salt, divided

¼ teaspoon black pepper

12 ounces pasta

5 ounces goat cheese, roughly cubed


Directions

Preheat oven to 425 F.

Peel squash, cut in half, scoop out seeds and stringy fibers (save seeds and roast them). Cut squash into 1/2-inch cubes. Toss squash cubes with 1 tablespoon of the olive oil and ¼ teaspoon salt. Roast on a rimmed baking sheet for about 30 minutes, stirring occasionally.

Bring 4 quarts salted water to boil. Add pasta.

While pasta is cooking, heat remaining 2 tablespoons olive oil and 2 tablespoons of the butter in a large skillet over medium heat. Add garlic and sauté until golden brown, about 4 minutes. Add the roasted squash, sage, salt, and pepper to the skillet.

Drain pasta, add to skillet with remaining tablespoon of butter. Toss to mix well. Toss again with goat cheese and serve.

Creamy Butternut Squash Pasta from Vicki Delany



You wouldn't think squash would make a fabulous pasta sauce, but I love this. It's so thick and creamy.  I bet your squash-hating family won't even notice what it's made of.

Ingredients

Butternut Squash Pasta with Leeks and Fried Sage #Thanksgiving #recipe @LucyBurdette


LUCY BURDETTE:  Suppose you have a hankering for a side dish for the holiday that’s a little different, but keeps the spirit too? And suppose you have vegetarian guests coming who won’t share in the turkey? Here’s an unusual autumn recipe that might solve both problems. I happened to have both gorgeous sage and leeks in my garden when I first tried this, but grocery store sage will work fine too...


Ingredients

    1 medium butternut squash,
    8-12 fresh sage leaves, stems discarded
    3 medium or 2 large leeks, cleaned and finely chopped
    3 tablespoons olive oil
    3 large garlic cloves, unpeeled
    1 cup grated Parmigiano-Reggiano
    1 lb rotini or penne
    1 cup chicken broth

    Grated Parmigiano-Reggiano to serve on the side

 
Cut the squash open, seed it, and cut into slices. Place this on a baking pan with the garlic, drizzle with olive oil, and toss to coat. Bake at 350 for 20 minutes until soft and just beginning to turn golden. Cool and peel, then process the vegetables in a food processor until smooth, along with 1/2 cup chicken broth. Keep this warm.

  

  While the squash is baking, sauté leeks in olive oil until  soft and lightly browned, 8 to 10 minutes. Add the prepared squash to the pan and simmer over low heat, about two minutes. Stir in 1/2 cup cheese and season with salt and pepper.

   



Cook rotini in a pasta pot of well-salted boiling water until al dente.

    


While pasta is cooking, heat vegetable oil in an 8- to 9-inch skillet over high heat until it shimmers. Add the sage leaves and fry until crisp but still green, under 30 seconds. Transfer to paper towels to drain.

    






Drain the pasta and add this to the squash mixture in a large bowl, thinning with warm chicken broth if it's too thick. Decorate with a few of the fried sage leaves, and serve the others on the side with extra cheese.
