Roasted Asparagus #recipe #giveaway @vmburns

 V. M. Burns: Asparagus isn't a vegetable I eat often. However, I was tired of eating the same vegetables and wanted something a bit different. Asparagus came to mind. Most asparagus recipes include garlic. And while I like garlic, it doesn't like me. So, I'm always scaling back on garlic or looking for alternate seasonings that will add flavor. If garlic doesn't bother you, then you can easily add garlic instead of the Italian seasoning. Or, you can add it in addition to the Italian seasoning. I also love lemons and cheese, so anytime I can add more of those, I do. This came out perfect for me. You may want to tweak it a bit for your own tastebuds. Fortunately, it's really easy.


ROASTED ASPARAGUS


Ingredients

  • 1 lb Asparagus
  • 1 Teaspoon Olive Oil
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon Italian seasoning
  • 1/4 Teaspoon pepper
  • 1 lemon
  • 1/4 Cup Grated Parmesan
  • Sprinkle of shredded parmesan cheese



Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Snap the ends off of the asparagus, drizzle with olive oil, and place on a baking sheet.
  3. Sprinkle salt, pepper, Italian seasoning, and grated parmesan. NOTE: I added a little shredded parmesan just because...cheese.
  4. Bake for 9-12 minutes depending on how much snap you like in your asparagus.

Lemon Roasted Asparagus #recipe by Linda Wiken, author

Asparagus season has stretched into fall this year and I'm loving it. But I usually stick to my time-honored recipes. However, it was time to try something new and since I love roasting veggies anyway, I looked for something different for asparagus.

I'd downloaded this from the internet a few weeks ago  but neglected to write down the site  and it didn't appear on the printout (so can't share that info). But I did tinker with it a bit and here's my take on it.

For starters, I ran out of freshly-squeezed lemon juice so used white wine vinegar for part of the amount. I didn't have any Parmeson cheese on hand so I used Asiago (a flavorful favorite of mine). And, I added some chopped fresh basil to it all. Just because!

Everyone did enjoy it, by the way. I served it with turkey (it was the Canadian Thanksgiving this past weekend!)

What you'll need:

1 lb. fresh asparagus
2 tbsp virgin olive oil
2 cloves garlic, minced
1 lemon, thinly sliced
2 tbsp freshly squeezed lemon juice
2 tbsp. Asiago cheese, grated
1/2 tsp. sea salt
1/4 tsp. ground black pepper



What to do:

Preheat the oven to 400F.

Meanwhile, line a baking sheet with parchment paper. Add the asparagus. Then add the freshly squeezed lemon juice, sea salt, black pepper, olive oil, and minced garlic. Thoroughly coat the asparagus. Top with lemon slices, chopped basil, and grated cheese.


Roast for 8-10 minutes in the oven.
