Thai Yellow Curry Coconut Soup #Recipe @Peg Cochran

This is supposed to be yellow curry soup from a site called Two Sleeves only I couldn't find yellow curry paste in my grocery store BUT I already had green curry paste.  So technically you would have to call this Thai Green Curry Coconut Soup.  It was delicious!  If you like coconut, you'll love this.  I made it in my Instant Pot but the recipe included directions for making it in your slow cooker as well.  It's a sort of "dump and go" type of recipe, which is perfect for busy cooks who want something easy but delicious.


      

Thai Yellow Curry Coconut Soup

4 chicken thighs skinless boneless (I used bone in, took the skin off and shredded the chicken when the soup was done.
14.5 oz unsweetened full fat coconut milk   
2 teaspoons Thai yellow or green curry paste   
3 teaspoons soy sauce
2 teaspoons fish sauce
1 teaspoon honey or agave
2 green onions, chopped
4 cloves garlic, minced 
2 inch piece of ginger, chopped (I used the stuff in the jar)
1 can straw mushrooms
1/2 cup grape tomatoes, halved
1/4 cup cilantro, chopped
3 green onions chopped
1 lime, juiced


For the Instant Pot 

Place the soup ingredients (chicken through ginger) into an Instant Pot and seal. 




Using the SOUP button, cook under pressure for 12 minutes.  Quick release the pressure and remove and shred chicken. Put chicken back in pot.

Add the straw mushrooms, cilantro, green onions and tomatoes to heat in the hot broth briefly.

Add lime juice and serve.




For the Slow Cooker

Place main soup ingredients (chicken through ginger) into a slow cooker and cook on low for 8 hours or high for 4 hours. 

Add straw mushrooms, cilantro, tomatoes and green onions for the last half hour. Remove and shred chicken. Put back into the soup.

Add lime juice and serve.

Garlic Butter Chicken Thighs #Recipe @PegCochran



This is a quick weeknight dinner that packs a lot of flavor so no apologies needed when serving this! Add a vegetable and a starch and dinner is on the table in 30 minutes or less! 

4 bone in skin on chicken thighs
5 cloves garlic crushed
¼ cup butter
1 TBL olive oil

Preheat oven to 350 degrees.

Season chicken with salt and pepper to taste.


Heat butter and oil in an ovenproof skillet over medium heat.

Add garlic cloves.  When pan is hot, add chicken skin side down.



Sear until skin is crispy and brown.  Watch the garlic and when it becomes too brown, remove cloves.


Turn chicken and brown other side.  Place pan in oven and bake 10 to 15 minutes .

Serve with garlic butter spooned over each piece.

Cranberry Apple Cake #ChristmasWeek #Recipe @PegCochran

It's late afternoon but it's already nearly dark out.  Snow is lazily drifting down--big, fat flakes--and you can see twinkling Christmas lights through your window.  Suddenly, there's a knock on the door!  It's too early for Santa--who could it be?  Just then you hear voices raised in song and when you fling open your door, carolers are standing on your front walk.  They have brightly colored scarves tied around their necks, and their faces are ruddy from the cold.

They finish their song and you invite them inside for some cake and hot cocoa topped with whipped cream.  Fortunately, you baked this cranberry apple cake earlier that day!  It's still warm and glistens with the dark red of the cranberries.


Cranberry Apple Cake

This cake isn't terribly sweet and is perfect for afternoon tea. 

1/2 cup butter
1 1/2 cups sifted flour
1 cup sweetened apple sauce
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
1 cup quick cooking oatmeal
3/4 cup whole berry cranberry sauce
Powdered sugar

Cream butter and sugar together.  Add eggs and continue to cream.



Add apple sauce and mix well.  (Batter will look slightly curdled)

Sift together flour, baking soda, salt and spices.



Add to creamed mixture and mix well.

Stir in oatmeal and cranberry sauce.




Bake in a greased and floured 9" square pan for 45 minutes at 350 degrees.   Dust with powdered sugar.

Quick and Light Italian Wedding Soup #Recipe @PegCochran

I don't know about you, but I'm feeling even more stuffed than our Thanksgiving turkey!  So much great food!  If you want to enjoy a few light meals before the Christmas feasting begins, here's a great recipe for a warm and comforting dinner!  Leftovers freeze well or make a great lunch the next day.

I've taken this recipe from the site Girlversusdough.com with a slight adaptation.

1 lb. ground turkey
1/2 cup plain breadcrumbs
1/4 cup grated Parmesan and more for topping soup
2 tsps. minced garlic
1 egg
1 tsp salt or to taste
1/4 tsp pepper or several grinds of fresh pepper
1 tablespoon olive oil
1 onion, halved and thinly sliced
2 cans chicken broth
2 cans diced tomatoes with juices
1 bunch kale, leaves coarsely chopped (I substituted baby spinach)
2/3 cup ditalini or elbow macaroni (Optional -- this was my addition)

Combine turkey, breadcrumbs, cheese, garlic, egg, salt and pepper until mixed.  Shape into smallish one inch balls.




Heat oil over medium heat.  Add onions and cook, stirring, until softened.  Add broth and tomatoes. Bring to a simmer and add meatballs. 



Cook, without stirring, for five minutes or until meatballs float to the surface. Add kale (or spinach) and stir gently.  Add small pasta if using.  Cook five to six minutes until greens are tender, meatballs are cooked through and pasta is al dente.



Serve sprinkled with more Parmesan.

#Thanksgiving Cranberry-Fig Compote #Recipe @PegCochran

Do you love cranberry sauce (why do they call it "sauce" I wonder?)?  I love trying different variations on the theme so when I found this recipe in our Parade Magazine (you know--it's tucked into your Sunday paper if you still get one), I decided to try it.  I love figs--my grandparents always had fresh figs and dried figs on hand.

Of course, cranberries play a big role in my Cranberry Cove series!  Monica Albertson heads to Cranberry Cove to help her brother on his cranberry farm. What she doesn't expect is to harvest a body along with the cranberries!


1 cup water
1 orange--juice and peel
1 cup chopped, dried figs
1 cup sugar
1 cinnamon stick
10 ounce package fresh or frozen cranberries
2 tablespoons balsamic vinegar
pinch of salt

Bring one cup of water to the boil.  Remove from the heat and stir in your dried figs and the juice of one orange.  Let sit for 15 minutes.







Return pan to medium heat and stir in one cup of sugar and one cinnamon stick.  Bring to a boil again and add one package of cranberries.



Reduce heat, simmer 10 minutes or until cranberries start to burst.

Remove from heat and stir in balsamic vinegar, zest of one orange and a pinch of salt.



Cool completely, remove cinnamon stick and transfer to a container.



Keep refrigerated for up to three weeks.
