Blueberry Streusel Coffee Cake

 


It was my husband's turn to host the monthly condo association board meeting--he's the treasurer.  Coffee and something to nibble are usually served.  I wanted to be able to offer something homemade and since the meeting is in the morning, I decided to make a coffee cake.  Blueberries were in season so I thought they would make a great addition.  I found this recipe on Barbara Bakes.  The recipe includes a glaze, which I chose not to add but I imagine it would be delicious.

I was ready to start mixing the batter when I realized I'd forgotten to soften the butter.  I learned the hard way not to do that in the microwave so I went hunting for a better method.  The one I found worked perfectly--run hot water over a glass until it's hot and place it over the stick of butter.  Let sit until butter is softened.  Repeat if necessary.


Crumb Topping

 

½ cup granulated sugar  

¼ cup flour  

3 tablespoons butter melted

 

Cake Batter

2 cups flour  

1 ½ teaspoons baking powder

½ teaspoon salt

½ cup unsalted butter softened, 1 stick

1 cup sugar  

2 large eggs  

2 teaspoons vanilla extract

½ cup milk   

1 tablespoon lemon zest

2 cups blueberries fresh or frozen

Icing

1 cup powdered sugar  

1-2 tablespoons lemon juice

  

Preheat oven to 350º F.

Spray a springform pan with non-stick cooking spray.  Flour pan.  (I lined the bottom of mine with parchment paper.)


 

Prepare crumb topping:  mix sugar, flour, and butter together in a small bowl with a fork.  Mixture should be sandy and then start to form small clumps.  Set aside.

Prepare glaze: Whisk together powdered sugar and lemon juice to create a thin glaze.

Prepare cake: Whisk together flour, baking powder and salt and set aside.

Beat butter and sugar until light and fluffy. Add eggs, vanilla and milk. 


 

 Sprinkle blueberries with lemon zest.


 

 

Add flour mixture to liquid mixture  and mix just until combined. Stir in blueberries.

Spread batter in pan and sprinkle with streusel topping.


 

Bake at 350º for 45-55 minutes or until a toothpick inserted into the center comes out clean.

Cool for ten minutes, remove from pan by running a knife around the edge and removing the ring. Cool on a rack.  


Drizzle with glaze if desired and enjoy!

Apple #Cake with Caramel Glaze

We were invited to dinner at a neighbor's and I wanted to take something along and found this recipe for apple cake.  The best part was I had everything on hand already and didn't need to go to the grocery store.

The cake was wonderfully moist with good flavor.  The caramel glaze was...wait for it...the icing on the cake. 



Cake

2 cups sugar
1 1/2 cups vegetable oil
2 tsps vanilla extract
3 large eggs
3 cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
3 medium apples, peeled and cored and chopped

Glaze
1/2 cup butter
2 tsps heavy cream
1/2 cup packed brown sugar
1 tsp vanilla extract

Preheat oven to 325 degrees.

Prepare apples.



Beat sugar, oil, vanilla and eggs until light and fluffy.

Combine flour, baking soda, cinnamon and salt and stir into batter until blended.

Fold in the apples by hand. The batter will be thick.  Pour into prepared bundt pan.



Bake for 55 to 70 minutes. ) Mine took around 55 minutes so be sure to check often.)



Allow to cool for 20 minutes in the pan and then invert onto a wire rack or cake plate.

Caramel Glaze

Heat the butter, heavy cream and brown sugar in a small saucepan over medium heat.


Bring to a boil.  Stir to dissolve sugar.  Remove from heat.



Add vanilla and stir.  Let sit 5 to 10 minutes to thicken.

Drizzle over cake.

Thai Yellow Curry Coconut Soup #Recipe @Peg Cochran

This is supposed to be yellow curry soup from a site called Two Sleeves only I couldn't find yellow curry paste in my grocery store BUT I already had green curry paste.  So technically you would have to call this Thai Green Curry Coconut Soup.  It was delicious!  If you like coconut, you'll love this.  I made it in my Instant Pot but the recipe included directions for making it in your slow cooker as well.  It's a sort of "dump and go" type of recipe, which is perfect for busy cooks who want something easy but delicious.


      

Thai Yellow Curry Coconut Soup

4 chicken thighs skinless boneless (I used bone in, took the skin off and shredded the chicken when the soup was done.
14.5 oz unsweetened full fat coconut milk   
2 teaspoons Thai yellow or green curry paste   
3 teaspoons soy sauce
2 teaspoons fish sauce
1 teaspoon honey or agave
2 green onions, chopped
4 cloves garlic, minced 
2 inch piece of ginger, chopped (I used the stuff in the jar)
1 can straw mushrooms
1/2 cup grape tomatoes, halved
1/4 cup cilantro, chopped
3 green onions chopped
1 lime, juiced


For the Instant Pot 

Place the soup ingredients (chicken through ginger) into an Instant Pot and seal. 




Using the SOUP button, cook under pressure for 12 minutes.  Quick release the pressure and remove and shred chicken. Put chicken back in pot.

Add the straw mushrooms, cilantro, green onions and tomatoes to heat in the hot broth briefly.

Add lime juice and serve.




For the Slow Cooker

Place main soup ingredients (chicken through ginger) into a slow cooker and cook on low for 8 hours or high for 4 hours. 

Add straw mushrooms, cilantro, tomatoes and green onions for the last half hour. Remove and shred chicken. Put back into the soup.

Add lime juice and serve.

Garlic Butter Chicken Thighs #Recipe @PegCochran



This is a quick weeknight dinner that packs a lot of flavor so no apologies needed when serving this! Add a vegetable and a starch and dinner is on the table in 30 minutes or less! 

4 bone in skin on chicken thighs
5 cloves garlic crushed
¼ cup butter
1 TBL olive oil

Preheat oven to 350 degrees.

Season chicken with salt and pepper to taste.


Heat butter and oil in an ovenproof skillet over medium heat.

Add garlic cloves.  When pan is hot, add chicken skin side down.



Sear until skin is crispy and brown.  Watch the garlic and when it becomes too brown, remove cloves.


Turn chicken and brown other side.  Place pan in oven and bake 10 to 15 minutes .

Serve with garlic butter spooned over each piece.

Turkey Redux #Recipe Turkey a la King @PegCochran

Do you still have leftover turkey from Thanksgiving or Christmas lurking in your freezer?  Raise your hand.  Ah, yes, I see quite a few of you do.  I still have the carcass and some meat to make turkey soup.  But there was enough left for another meal so I settled on this recipe for Turkey a la King from the NY Times.

Measurements in the recipe are theirs--I was a little loosey goosey with mine.  My chunk of white meat turkey yielded 2 cups not 1 1/2 cups turkey so I wasn't about to try to find another use for the 1/2 cup of meat.  Ditto the mushrooms.  We enjoyed this very much over noodles but you can put it over rice, biscuits or whatever suits your fancy.

And as a bonus, it's quick and easy to make!

6 TBL butter
2 TBL flour
1 3/4 cups turkey or chicken stock
2 cups sliced mushrooms
1 1/2 cups chopped cooked turkey
1/2 cup heavy cream
1 cup frozen peas
2 TBL sherry
Salt and pepper to taste
Parsley for garnish if you have some


Cubed cooked turkey


Sliced mushrooms

Melt four TBL butter over medium heat.  When it begins to foam, add flour and whisk until the mixture turns approximately the color of straw.  Slowly add a cup of stock and continue whisking (I found that a little more than cup made the sauce the perfect consistency so I didn't add the rest.)


Melt butter


Add flour


Cook until the color of straw


Keep the sauce warm.  Instructions have you add the cream later, I added it now and it was perfect.

Heat remaining 2 TBL butter.  Add mushrooms and cook until mushrooms are soft and have yielded their juice.  Add the turkey, warm sauce, cream (if you didn't add it to the sauce) and peas.  Stir occasionally until mixture is hot and peas are cooked.


Add mushrooms and cook until soft


Add turkey, sauce and peas

Stir in the sherry, adjust seasonings and serve sprinkled with parsley if desired.
