Welcome Guest Lisa Q. Mathews with St. Patrick’s Day Coddle (and a sweet treat) plus a Giveaway!





Molly MacRae: Top of the morning to you! I’m pleased as a leprechaun to welcome Lisa Q. Mathews back to the kitchen today. Readers, you’re in for a treat.

Lisa: Happy-Almost-St.-Paddy’s, Everyone! A huge thank you to Molly MacRae and all the brilliant authors at Mystery Lover’s Kitchen for allowing inviting me back to share another Irish recipe with you. I’m thrilled this year to celebrate both St. Patrick’s Day (my favorite holiday!) and the publication of my second book in the Irish Bed & Breakfast Mysteries, BURIED IN SHAMROCKS.

The Buckley House, the Irish-themed B&B run by my sleuth Kate Buckley’s family in touristy Shamrock, MA, receives higher guest ratings for charm and coziness than cuisine. But Kate’s mom Eileen, a character based on my late Irish mother-in-law who raised a rowdy clan of 5 boys and 2 girls, is a pro at throwing delicious meals together in a pinch with whatever ingredients she has in the pantry. A favorite old-school Irish dish? The simple coddle: filling and tasty (especially on a windy spring day), and perfect for an easy Paddy’s Day dinner! Here’s the very versatile recipe—and a wee treat for a festive dessert!

St. Patrick’s Day Coddle

Ingredients


1 lb. sausages (I was sadly unable to procure imported Irish sausages this year)

8 oz streaky bacon

2 cups stock (ham or chicken) or water. Reserve the 2nd cup for later. (I used 1 cup Guinness mixed with 1 cup water as my “stock.”)  

3 large potatoes (or 5 medium)

2 medium-large onions

Salt and pepper

Fresh parsley (optional)


Directions  

Serves 4-6

Prep by peeling and cutting the potatoes (in our house, this is the job of the 2 youngest children skilled enough not to cut themselves) and onions. Slice thickly, rounds preferred for easy layering.

Cut the bacon into 1” squares.

Bring half the stock to a covered boil in a medium or large saucepan. I used a skillet and added a lid, but you can also use the deeper Dutch oven, which allows for more layers.

Add the sausages (whole) and bacon. Simmer (covered) for about 5 mins. Remove the sausages and bacon to a platter and save the liquid.

Cut each sausage into 4-6 pieces on the plate.

Assemble a layer of potatoes in the skillet or saucepan of stock, followed by a layer of onions and half the sausages and bacon.

Repeat the process (until you run out of ingredients or room), finishing with a layer of potatoes. (I ran out of potatoes, so I just added a few on top).

Pour reserved stock over the layers and add salt and pepper. You can throw in some parsley (it may wilt a bit during simmering; its main job is adding a bit of color) and your preferred seasonings.

Cover and simmer gently for about an hour. (Pretty much set-it-and-forget-it, but I checked midway and gave things a stir so the potatoes on the bottom didn’t stick).

Add more seasoning to taste and serve extra-hot!

NOTE: I added the aforementioned parsley and some nice green lettuce for “green”—and also a store-bought Irish soda bread, which was surprisingly delicious (I couldn’t get my usual mix from Ireland this year). It probably helped that I popped the whole loaf of bread into the oven to toast, with a generous slathering of Kerrygold on top. Everything is better with pure Irish butter, the secret to all Irish cooking. (One of my characters even used it for the butter sculpture at the Great Shamrock Fair in BURIED IN SHAMROCKS, but please note that it melts more quickly due to its higher fat content than most American butters!) 

As also mentioned, the coddle is quite filling. You won’t always be offered a sweet dessert after a true Irish meal, unless it’s a dinner party or special occasion, but here’s a treat idea to add to your Paddy’s celebration:

Strawberries & Whipped Cream with Green Fairy Dust

Ingredients

Strawberries

1 C heavy whipping cream

2 T confectioner’s sugar

1 t vanilla

Optional: 2 T Baileys (I used Emmets, which is economical and tastes basically the same—one of my mom-in-law’s secrets)

Sprinkling of green crystal sugar


Directions

Serves about 6 

Hull and slice the desired number of strawberries. Place in individual bowls.

Whip the cream, sugar, and vanilla together for about 5 minutes, until the cream is perky. Then stir in the Baileys if you’re using it, dollop the cream over the berries in each bowl, and sprinkle the fairy dust.

NOTE 1: Sure, you can use Cool Whip instead of fresh whipped cream. (Shhh!)

NOTE 2: You may detect a few Hershey kisses in the photo (I couldn’t get Irish Cadbury Buttons this year) in honor of Kate’s cop brother Frank. He pops sweets all day long and often leaves a tell-tale trail of wrappers, which drives Kate crazy.

Guest Lisa Q. Mathews with #Giveaway and Giant New England Blueberry-Lemon Whoopie Pie!

From Lisa Q. Mathews: If it’s July in New England, there’s a fair or festival going on in a small town near you. The outdoor season starts at Memorial Day Weekend and runs straight through October (bring a sweater!). Just point yourself in any direction, and take your pick of themes: crafts, berries, books, hot air balloons, ice cream, butter, beer, firemen’s carnivals. And, of course, in the Massachusetts town where my Irish Bed & Breakfast mysteries take place, you can’t miss the Great Shamrock Fair. 

There’s plenty to see and do at all these events, of course, from creaky rides and tractor pulls to 4H exhibits to dance and musical performances to giant pumpkin rowing races to fireworks in the nighttime sky. 


But there’s one place you’re sure to find me: the food tent. In particular, the snack table of homemade treats sponsored by local groups like the Ladies Rosary Society of the local church. And because this is New England, you are almost 100% guaranteed to find the beloved Whoopie Pie, in every flavor and combination of the taste rainbow. 

Here’s a sweet recipe that’s wicked easy to make—because we’re going to cheat a teensy bit and use boxed blueberry cake mix! (Why spend any longer in a hot kitchen in July than you need to?) 


New England Giant Blueberry-Lemon 

Whoopie Pie with Lemon Buttercream Filling

Ingredients:

1 box blueberry muffin mix (I use Krusteaz)

2 eggs

2/3 cup water or milk (I use milk.)

2/3 cup oil (I use vegetable oil.)

1 teaspoon vanilla extract 

Zest of 1 lemon 

1/2 cup fresh blueberries 

Instructions:

Preheat oven to 400°F. Prep two 8 or 9 inch round cake pans (I use parchment paper).

Mix the dry ingredient packet, eggs, milk, oil, and vanilla into a batter. 

Fold in fresh berries and zest. 

Divide batter evenly between pans and smooth the tops. 

Bake approx. 30 minutes (keep checking!) or until a toothpick comes out clean. Cool in pans at least 10 minutes, then turn out and cool fully before frosting.


🍋 Lemon Vanilla Buttercream Filling

Ingredients:

1/2 cup unsalted butter, softened (I use Kerrygold, of course!)

1-1/2 to 2 cups powdered sugar

2 tablespoons fresh lemon juice

Zest of 1 lemon

1/2 teaspoon vanilla extract

Pinch of salt

Optional: a few tablespoons (or more) of milk to thin frosting

Instructions: Beat butter until fluffy (I used a hand blender), about 2 to 3 minutes. Gradually add powdered sugar. Beat in lemon juice, zest, vanilla, and salt. Thin frosting consistency with milk, a dash at a time. 

Tips: Chill cakes well (I stick mine briefly in the fridge on hot days) before frosting. I give my cakes about 2 minutes extra in the oven so they’ll be firmer.
Frost top of bottom layer directly on your serving plate and then place the top layer. (The parchment paper makes this a breeze—the cakes slide right off.)
Cover whoopie pie tightly in plastic wrap and store in fridge to help keep its shape (messy, but that’s part of the fun!) 

Variation: For smaller (3 inch) whoopie pies, scoop about 2 tablespoons of batter each onto baking sheets lined with parchment paper. Space apart and bake 10-14 minutes (keep checking!) or until tops spring back. After cooling and filling, plastic-wrap individually for grab-and-go treats. Makes about 10 servings.

If you’re looking for a true New England-style beverage to go with your whoopie pie—and you are also very brave—grab a bottle of Moxie from the cool-ah. What is Moxie? Well…it’s a classic local soft drink that you have to taste to understand. It’s sort of a fizzy, bittersweet cola with a hint of root beer/licorice/cough medicine. Some people love it, some don’t, but it’s memorable! (You might want to wait a bit before you hit the Scrambler or ride down the giant slide on a burlap bag.) And guess what? Today, July 13th is the last day of the Moxie Festival in Lisbon, Maine. See you there!

BURIED IN SHAMROCKS

Kate Buckley returns to her Irish-themed hometown for the summer, but when her ex becomes the prime suspect in his fiancée’s murder, she must clear his name for the sake of their daughters, perfect for fans of Elle Cosimano and Carlene O’Connor.

Kate and her daughters Maeve and Bliz are back in Shamrock, Massachusetts, and Kate faces a big decision: Should they move back to their hometown for good? Chicken in Guinness with Mash from Guest Author Lisa Q. Mathews + Giveaway

Happy St. Patrick’s Day, one and all! And thank you, Mystery Lovers' Kitchen, for inviting me to share my favorite holiday with you. The Jig is Up, the first book in the Irish Bed & Breakfast series, kicks off on August 20th—but it’s never too soon to start celebrating!

The bagpipes are calling and you’re donnin’ the green, ready to hit the parade. Unless…you somehow forgot to prepare the corned beef and cabbage yesterday. Or you’re still trying to banish last year’s fine aroma from your kitchen. No worries, here’s a delicious, hearty recipe that’ll have you ready for Paddy’s in a pinch—no need for the luck o’ the Irish or a prayer to St. Jude. Send the family off to save a spot at the parade, and Bob’s your uncle.

What you do need are a few simple, fresh ingredients and a can or two of Guinness to make this Irish version of coq au vin. It’s a modified version of the traditional Beef in Guinness, using chicken, which cooks faster. The alcohol burns off in the cooking, and if you don’t have Guinness on hand, you can substitute another beer (the Guinness does give a lovely taste, though.) No need to measure precisely, and if you prefer you can substitute simple boiled potatoes (add salt, butter, and parsley) for the mash. Every family has their own style of spuds, but this is our favorite—and thanks to early training, all of my kids are champion peelers. (My relatives in Ireland can peel with a knife faster than I can get a Good Grips peeler out of the drawer, but there you have it.)

Note: If you’re looking for a truly authentic taste of the Emerald Isle, Kerrygold butter is the way to go. Pure cream from happy Irish cows (all that rain and green grass to roam) and salt. Keep in mind that, due to its higher fat content, it melts faster, and you can use a wee bit less—but you won’t be sorry. (Fun fact: Kerrygold was banned in Wisconsin until 2017.)

Chicken in Guinness with Mash (serves 4)

Ingredients

(Chicken)

2.5 pounds boneless, skinless chicken thighs

2 yellow onions

6 medium carrots

Enough flour to coat the chicken 

Pepper 

¼ c butter 

2 c Guinness and water, mixed (more as needed)

Fresh parsley


Instructions

Peel and slice the onions and carrots. 

Cut chicken into chunks and toss in flour seasoned with pepper. (I shake the chicken in a brown paper bag and dump the chicken pieces into the pot, hands-free.)

Brown chicken quickly in hot butter in Dutch oven or other high-sided pot. 

Remove chicken into a bowl and fry onions until transparent. 

Return chicken to pot with onions, then add carrots and Guinness/water mixture.


Bring to a boil, reduce heat to a gentle simmer, cover closely and cook for about an hour. Check periodically to make sure the dish doesn’t dry out, adding more Guinness and water if needed. (I add a little more Guinness than water.) Sprinkle with fresh parsley before serving.


(Mash)

Ingredients

8-10 potatoes (Note: Rule of thumb is 2 medium spuds per person—but make it 3 and you’ll have leftovers. Mashed potatoes can be reheated (microwave works well if you add a little milk and stir-halfway through—but freezing is not recommended!)

1.5 c milk (I use 2%--with more added as needed for smooth consistency)

.5 c butter (more to personal taste, depending on number of spuds)

Sea salt if desired

Pepper

6-12 scallions/green onions (I don’t use the tops)

1 t nutmeg (to taste)


Instructions

Rinse potatoes in cold water, then peel and rinse again. Cut each potato into quarters, then cut any larger pieces so sizes are uniform (they’ll cook more evenly). Place in large saucepan and cover with cold water. Add water high enough so there’s liquid above the spuds, but not so high that the water is likely to boil over. 

Bring to a boil on medium-high heat, leaving the lid a bit open. Stir occasionally with a wooden spoon, so the spuds cook evenly in a crowded pot. Lower heat, and let spuds boil until soft and mushy when pricked with a fork. (It’s okay if the water is a little murky.)

Slice scallions and butter separately while potatoes are cooking and place aside.

Drain water from the pot. Use a potato masher to give the spuds an initial smash, then mash them with a dinner fork. (This prevents hard, uneven surprise lumps.) 

Add butter, a few slices at a time. Season potatoes with pepper (and sea salt if you’d like) and stir lightly with fork. Then start gradually adding the milk. Switch from fork to wooden spoon and stir, adding scallions.  Then sprinkle nutmeg in, a wee bit at a time—it really “perks” the potatoes. 

Serve chicken alongside or atop the potatoes, using plates or bowls. Garnish with parsley sprigs. Serve with Irish brown bread (it has a nuttier, less-sweet taste than soda bread).

I don’t have a bread recipe because…I use a mix, just like my relatives in Ireland! During my first visit I was amazed that delicious fresh bread was served at every meal. I couldn’t stop remarking on it. Upon my return home, I discovered a family member had tucked a package into my suitcase. It just happens that the Buckley family in The Jig is Up secretly uses the same shortcut at their bed & breakfast, The Buckley House. (And so does their big competition, The Smiling Shamrock across town in Shamrock, Massachusetts.)

There's a bonus to using mash instead of boiled potatoes: You’re halfway to a delicious Irish-style breakfast (a mini version) tomorrow. Just form those leftover spuds into paddy’s patties and fry them up with a few Irish bangers (I got mine online). Bring out that trusty brown bread and serve with Irish jam. Leave the dishes to family members or the kitchen fairies (more helpful than the other kinds).

EASY-BREEZY-BLUEBERRY 

BOOK CLUB TREATS 

It’s steamy mid-summer, but my odd-couple sleuths Summer and Dorothy—aka the Ladies Smythe & Westin—and I have a lot on our (paper) plates. I’m working on a new book and the Ladies are working to solve a murder. And as the Goddesses of High Humidity would have it, all three of us need to whip up some tasty, quick-and-easy treats for our next book club meetings ASAP. 
Dorothy, a seventy-something widow, has fond memories of the long-ago summers she and her husband spent in a cozy Maine cabin. Now that she lives year-round at the Hibiscus Pointe Senior Living Community in Florida, those cool, pine-scented days can seem very far away. 

But she vividly remembers how much she loved filling baskets with freshly-picked, wild blueberries, and the simple but delicious recipes her mother jotted onto berry-stained cards and filed in a small wooden box. In fact, Dorothy keeps that same, faded box with the blueberry wreath painted on the lid in a place of honor on her kitchen counter. 
Dorothy’s twenty-something neighbor and co-sleuth Summer, an ex-party-girl from California who’s camping in her late grandma’s condo, doesn’t have much experience with blueberry-picking. 

But she knows those berries are full of antioxidants and Vitamin K to pack a punch in her favorite smoothie. Plus, she loves the idea of minimal cooking and maximum yum. Book club refreshments (or unexpected visitors) problem solved—and more time to solve a mystery! 




ROUND-THE-CLOCK COOKIES


Summer loves these blueberry-lemon oatmeal cookies—with added chocolate chips—for breakfast and late-night snacks!

Serves 2 dozen

Prep Time: 30 mins. 
Cooking Time: 10-12 mins at 350° 

INGREDIENTS:

¼ cup soft butter
¼ cup brown sugar
1 tsp. cinnamon
¼ cup sugar 
1 egg
1 tsp. vanilla
2 Tbsp. lemon zest
1 cup flour
½ tsp. baking soda
¼ tsp. salt
1½ cups old-fashioned oats 
Sprinkle of cinnamon
1 cup blueberries
Chocolate chips or chopped walnuts (optional)

INSTRUCTIONS: Pre-heat oven to 350°F. Line cookie sheets with parchment paper (for easy blueberry clean-up!) 

In large mixing bowl, beat butter, sugars, egg, vanilla, cinnamon, and lemon zest on Medium until smooth. Mix in flour, baking soda, and salt until combined, then mix in oats with wooden spoon. Add chopped walnuts or chocolate chips, if desired. Carefully fold in blueberries. 

Use cookie or ice cream scoop to form and drop cookies onto lined cookie sheets. Flatten slightly with back of scoop. Bake 10-12 minutes until golden brown. Let stand on sheets for a minute or two, then transfer to wire rack for cooling. 


BLUEBERRY MOON LEMONADE

Dorothy brings this classic, refreshing beverage to the pool in a Thermos to share with Summer and their adorable 6-year-old friend, Juliette-Margot. (At cocktail hour, the Ladies sometimes add a little vodka to theirs.)

Serves 6-8

Prep Time: 20 mins. 

INGREDIENTS:

½ cup sugar
1 cup blueberries 
¾ cup fresh-squeezed lemon juice
½ lemon (sliced)
Mint leaves or springs 
Water (total 7-8 cups)

INSTRUCTIONS: To make a blueberry simple syrup, stir sugar and 1 cup water together in saucepan over medium heat until sugar dissolves. Stir in blueberries and bring to a boil. Lower heat and simmer about 3-4 minutes, until blueberries pop.

Strain blueberry mixture and discard skins. Allow liquid to cool.
In large pitcher, whisk together blueberry syrup, lemon juice and 6-7 cups water. Chill in refrigerator.

Serve over ice. Add a few more blueberries, lemon slices, and mint to each glass, for a festive touch!



BLUEBERRY-LEMON ICED TEA ZINGER

Need a morning or late-afternoon pick-me-up? The Ladies have the perfect answer, especially if you have a lot of reading to do! (If you prefer, though, you can substitute decaffeinated tea bags.)

INGREDIENTS

1 16-oz package frozen blueberries 
½ cup fresh-squeezed lemon juice
4-6 cups of water
3 large tea bags 
¾ cup sugar
Lemon slices and mint leaves or sprigs

INSTRUCTIONS: Bring frozen blueberries and lemon juice to a boil in large saucepan over medium heat. Cook about 5 minutes, stirring occasionally. Remove from heat and pour through a strainer. (Dorothy suggests doing this over the sink.) Discard skins and rinse saucepan.

Bring 4 cups water to a boil in same saucepan. Add tea bags and steep 5 minutes. Remove tea bags, stir in sugar and blueberry syrup. Pour into pitcher, add more water to fill. Cover and chill. Serve with ice and garnish with lemons and mint.




SUMMER’S 1-2-3 SALAD

This was Summer’s favorite side dish back in LA. It’s so fast and easy, you may have time to catch some rays (or a murderer) before book club!

INGREDIENTS:

1 cup fresh blueberries
2 cups diced cucumbers
3 cups diced watermelon
½ lime, juiced
Pepper and pinch of sea salt to taste
Mint leaves 

INSTRUCTIONS: Mix together the watermelon and cucumber. Drizzle with lime juice and stir. Carefully fold in blueberries. Add pepper to taste (if you’re not eating til later, wait to add the salt). Garnish with mint, stick in the fridge, and hit the beach!



SAL’S ALMOST-INSTANT 

BLUEBERRY SAUCE

The Ladies and I found we still had plenty of blueberries left over, even after making so many book club treats. Dorothy went back to her mother’s old recipe box for this one—try it over pancakes, yogurt, toast, graham crackers, bananas, in smoothies and, of course, over ice cream for a perfect sundae. (Stir into slightly-melted, classic vanilla and, presto! Designer-blueberry ice cream.)

INGREDIENTS:

3 cups blueberries (fresh or frozen)
1 cup water
½ cup sugar
1 ½ Tbsp. corn starch dissolved into 3 Tbsp. water
½ tsp. vanilla

INSTRUCTIONS: Place 2 cups of the blueberries in saucepan. Cover with water; add sugar and vanilla. Heat over medium-high until mixture comes to a low boil and blueberries start to pop.

Add dissolved cornstarch to saucepan and bring mixture to rolling boil. Turn down heat and simmer on low for about 2 minutes, until sauce reaches desired thickness. (If it gets too thick, add water, a tablespoon or two at a time.)
Remove from heat and add remaining blueberries. Stir gently. May be served warm or cold.
