Hello from TINA KASHIAN! I have a sweet tooth, especially for chocolate. I baked these cookies with my two daughters during the holidays, and they came out quite tasty. They are not overly sweet and are a perfect dessert. They are also good as a morning treat with a cup of coffee or tea.
Ingredients:
1 cup shortening
2 cups firmly packed light brown sugar
Pinch of salt
1 teaspoon baking soda
¾ teaspoon cinnamon
½ teaspoon nutmeg
3 squares (3 ounces) unsweetened chocolate, melted
2 eggs
2 ½ cups flour
1 cup buttermilk
confectioners' sugar (optional)
Directions:
Cream shortening with the brown sugar.
Microwave 3 squares (3 ounces) of unsweetened chocolate until melted.
Blend in the salt, baking soda, spices and melted chocolate. Beat in the eggs Add the flour alternately with the buttermilk.
Chill the dough for at least an hour. Preheat the oven to 375 degrees. Drop teaspoons of the dough onto cookie sheets.
Bake for 15-20 minutes. Cool on wire racks. If you like a little extra sweetness, sprinkle with confectioners' sugar.
