since I’ve been a guest at Mystery Lovers Kitchen, and I’m thrilled to be back.
Life is busy for everyone these days. I constantly
find that I have too much to do. Between my family, writing three books a year
and a day job, there’s never enough time. Add in the holidays and it’s easy to
get overwhelmed.
I love Thanksgiving so much that I decided to write a
mystery about the holiday. In the Blink of a Pie is the third book in my
maple syrup series. Set in Vermont, the series follows Leila Khoury as she
comes home to find her father’s killer and take over running his maple syrup
farm. In cozy mystery fashion, Leila also manages to uncover a few other
murders as well.
Like Leila’s mother,
I enjoy hosting Thanksgiving every year for my family, but because of time
constraints, I’m always on the lookout for shortcuts. Since my husband and sons
are all meat and potato eaters, one variety of potatoes with the turkey isn’t
enough. That’s where my baked potato casserole comes in. It’s super easy, delicious,
and definitely a comfort food.
BAKED POTATO CASSEROLE
Ingredients
Six medium potatoes, baked or boiled
1/4 cup butter
4 ounces cream cheese,
softened
2/3 cup sour cream
1/2 cup of milk or cream
(more or less to taste)
2 cups of cheddar cheese,
shredded
1 onion, thinly sliced
10 slices of bacon,
cooked and crumbled
Salt and pepper to taste
Toppings:
1/2 onion, sliced
2 slices bacon, cooked
and crumbled
1/2 cup cheddar cheese
Instructions
Pre-heat oven to 375 degrees Fahrenheit. Mash the warm potatoes with a potato masher. Add butter, cream cheese, and sour cream. While mashing, add the milk/cream a little at a time until it reaches a creamy consistency.
Stir in the remaining ingredients (except toppings) and spread into a two-quart casserole dish. Sprinkle the toppings and bake for 25-30 minutes, or until the cheese is melted and the potatoes are hot.
Note: With my brood, I always double the recipe. If
there are any leftovers, they taste even better the next day!

DeleteAs far back as I can remember, it seems like the standard green bean casserole was always a must on everyone’s holiday table. Then many years ago, my mom found this recipe and it’s been our go to green bean casserole ever since and a must have.
ReplyDeleteGreen Bean & Shoepeg Corn Casserole
Ingredients
1 can French style green beans - drained
1 can White shoepeg whole kernel corn - drained
1 can Cream of celery soup
1 ½ cup Grated cheddar cheese
½ cup Sour cream
½ cup Onion - chopped
1 can Water chestnuts, chopped finely
For Topping:
1 roll Ritz crackers, crumbled
1 stick Butter – melted
Directions
Place the green beans into casserole dish.
Top with the shoepeg corn.
Mix all other ingredients except for the toppings. Pour on top of the corn layer.
Mix the cracker crumbs and melted butter together and the top the casserole with the mixture,
Bake uncovered for 40 minutes in a 350 degree oven.
Note: I’m always being asked for this recipe. To me, it’s good hot out of the oven, at room temperature or even cold out of the refrigerator for the leftovers – if you have any. I’ve also made it up the night before (except for the topping), finished it up the next day and popped it in the oven with great results.

DeleteThe side dish we always have is a dessert salad we call Cherry Coke Salad. It has cherry gelatin (either sugar free or regular) made with Coca-Cola as most of the liquid (either Diet or Regular), a can of dark sweet cherries chopped (and cherry juice as part of the liquid to make the gelatin), a diced 8 oz package of cream cheese, and lots of pecan halves. It has been a family favorite for decades. When our daughter went across the country for college, this recipe was chosen by Dining Services to serve to students and staff as a favorite recipe from home.

DeleteOh my, those potatoes look amazing! We must have Mom's Stuffing or it's just not Thanksgiving. My cranberry relish has become pretty much a required staple as well. It's so simple.
ReplyDeleteOne bag of cranberries
One whole orange cut into eighths (including rind)
Either 2 tart apples, or one apple and a pear cut into eighths (peeled or not)
1/3 or so cup of honey (add more or less to taste)
A couple of drops of orange essential oil (you could use orange extract.
Put all ingredients into a food processor and pulse until it is relish like, not liquid.
Do not use a blender to make this, it becomes to fine and soupy.

ReplyDeleteThat recipe sounds delicious, and adding the bake is new to me. I'll have to give it a try. Our Thanksgiving was in early October, but I didn't cook because we were on a cruise and served our turkey and stuffing celebration in the Adriatic Sea. (I love HAL for that reason...they recognize cultural celebrations). Now I'm thinking Christmas. Our side dish will be stuffing, and my crockpot glazed carrots. Yum!
