Lamb Ragu #Recipe @PegCochran

 


I roasted a leg of lamb for dinner one Sunday.  Our guests had to cancel so it was just the two of us. There was a lot of lamb leftover as you can imagine! I used it to make this lamb ragu.  It was so tasty!  I served it over penne pasta but you can serve it with the pasta shape of your choice.  If you can find San Marzano tomatoes, those are the best.  

Lamb Ragu

1 onion, chopped
1 carrot, chopped
1 tbs olive oil
leftover lamb, shredded or cut into bite-sized pieces
Splash of red wine
1 28-ounce can whole tomatoes
1 lb. pasta of choice
salt & pepper to taste

Heat olive oil in a Dutch oven or large saucepan.  Stir in carrots and onions and cook, stirring occasionally, until beginning to soften.


 

Deglaze pan with a splash of red wine or broth


 

Add tomatoes and break up with a spoon


 


 

Add leftover lamb


 

Simmer approximately 30 minutes until tomatoes begin to break down and flavors meld

Add salt and pepper to taste

Serve over pasta and top with Parmesan cheese if desired

Ragu from Leftover Pot Roast #Recipe @PegCochran




 

I love repurposing leftovers! This was a great way to use up the remains of a pot roast, which can get dry or tough when reheated. The sauce had a lot of flavor and was quick and easy to make.

2 tablespoons extra-virgin olive oil
1 medium shallot, finely chopped
2 cloves garlic, minced
1/2 cup dry red wine
2 cups finely chopped leftover pot roast and vegetables
1/2 cup leftover gravy or homemade or low-sodium canned beef stock
1 twenty-eight-ounce can whole plum tomatoes, roughly chopped, with juice
1 teaspoon chopped fresh thyme
salt and pepper to taste


Chop pot roast.


Heat olive oil and sauté onion and garlic--about 3 minutes.


 
Add wine and deglaze pan. Boil wine until nearly evaporated.

 


 
Add tomatoes, pot roast, beef stock, thyme and salt and pepper to taste.


 

Bring to a boil then reduce to a simmer. Cover and cook 30 minutes.

Serve over pasta of your choice. Top with grated Parmesan cheese if desired.

Since a wedding might be on the horizon, I decided to help Dev eat a little healthier. With that in mind, I’m sharing my Turkey Sausage Ragù Over Polenta recipe. This recipe has a reasonable number of calories, is tasty, and doesn’t make you feel as if you’re leaving the table hungry. Just add a salad and you have a hearty, healthy dinner.




Turkey Sausage Ragù over Polenta



 Ingredients
1 tablespoon olive oil
I lb. hot Italian turkey sausage (remove casing)
1/2 teaspoon black pepper
2 cups coarsely chopped yellow onion
10 oz. shredded carrot
3 garlic cloves, chopped
3 1/2 cups water, divided
1 (15-oz.) can unsalted tomato sauce
2/3 cup quick-cooking polenta
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh flat-leaf parsley (optional)



Directions
Heat oil in a large skillet over medium-high. Add sausage; cook 5 minutes or until browned, stirring to crumble. Stir in pepper. Remove sausage mixture to a bowl with a slotted spoon. Remove pan from heat (do not wipe out pan).


Add onion, carrot, and garlic to pan, return pan to medium-high and cook 5 to 7 minutes or until tender. Add sausage mixture, 1/2 cup water, and tomato sauce to pan; cook 1 minute.


Bring remaining 3 cups water to a boil in a medium saucepan. Whisk in polenta. Reduce heat; cook 3 minutes or until thickened, stirring frequently with a whisk or spoon. Stir in cheese. Serve polenta with ragù. Garnish with parsley, if desired.
