Pumpkin Risotto #Recipe by @LibbyKlein #Pumpkin #Thanksgiving

Libby Klein Risotto is one of those things I have had in restaurants that lack a decent gluten-free menu. It seems like some of them go out of their way to add gluten to everything. Steak marinated in beer. Chicken with soy sauce in the gravy. Bread crumbs on everything. Risotto has been the only gluten-free option on some menus. But I would not make it at home for years.

Risotto always sounded like it would be something very complicated and tricky. Restaurants have made it sound like it took a lot of finesse to pull off successfully. I'm not sure why. Maybe it's because the first risotto I ever made was foolproof and addressed the potential problem areas, but I find this dish to be rather easy. Keep your cooking liquid hot, add it in batches when the risotto cooks down, and test your risotto when you think it's done to be sure the rice has cooked all the way. If you find it's a little hard, add some more hot water/broth and let it cook down some more.

This risotto is perfect for fall, and makes a great vegetarian Thanksgiving dish.



Pumpkin Risotto

4 servings




Ingredients


Topping:

2 tablespoons unsalted butter divided

12 fresh sage leaves

¼ cup dried cranberries roughly chopped

¼ cup shaved almonds, toasted

2 slices of crispy bacon, chopped


Risotto

2 tablespoons unsalted butter

2 large shallots, diced

4 cloves garlic minced

½ teaspoon kosher salt

½ teaspoon black pepper

1 cup arborio rice

½ cup white cooking wine

4 cups chicken stock

½ teaspoon nutmeg

½ thyme

1 cup pumpkin puree

½ cup parmesan cheese


Instructions

Toppings

In a small pan, melt 2 tablespoons of butter over medium heat. Then add in the sage leaves and cook for 1-2 minutes or until crispy. Immediately remove from the heat and pour off into a small dish and set aside. I'll assume your bacon, cranberries, and almonds are ready to go.


  



Pumpkin Risotto

In a large skillet over medium heat, melt the butter and add in the shallots, garlic, salt, and pepper. Cook slowly for about 20 minutes, stirring occasionally until the onions are soft, golden brown, and beginning to caramelize. 


In a medium pot, heat your stock over medium heat until almost simmering. You don't want it to boil because it will start to reduce and you'll have to add more stock or water.


Add in the rice to the skillet with the shallots and garlic and toast, stirring frequently, for about 2 minutes. Then add in the white wine to de-glaze the pan and make sure to scrape up any browned bits on the bottom of the pan.


  



Add in ½ cup of the hot stock and stir the risotto until the stock is completely absorbed, then add in another ½ cup and repeat. Continue to add in the stock ½ cup at a time until it’s all absorbed and the rice is fully cooked. Mix in the nutmeg and thyme. Test your rice to see if it is soft. If not, add a little more hot stock (or hot water if you're out of stock) and let it cook down some more. Once it is soft, stir in the pumpkin puree and parmesan cheese until fully combined and creamy. Taste and add salt and pepper if needed.




Top the pumpkin risotto with the bacon, cranberries, toasted almonds and crispy sage.

For creamier risotto, stir in a splosh of heavy cream before adding the toppings.

Fabulously Moist Pumpkin Bread with Walnuts #Recipe by @Libby Klein

Libby Klein The merest hint of chill in the air, the first leaf to turn colors, and I fly into action baking fall treats. Autumn is my favorite time of year and I will it to start when the days are so muggy you need a shower after checking the mailbox at the end of the driveway. 

Pumpkin bread isn't new, and I'm not doing anything special with it here. But this is a fantastically moist recipe that turns out every time. If you want to fancy it up, try a sprinkle of pumpkin seeds on top of the loaves before they go into the oven. Or make a cheesecake spread or orange honey butter to slather on the slices and eat them for dessert or breakfast.

Quick breads are muffins made in loaf pans, so they could not be easier. Mix your dry ingredients in one bowl, your wet ingredients in another, then combine them. Fold in your extras and pour into pans. Voila. The house smells like Fall. You're welcome.

Fabulously Moist Pumpkin Bread with Walnuts

Yield 2 loaves

1 (15-ounce) can pumpkin puree
4 large eggs
1 cup vegetable oil
⅔ cup water
3 cups white sugar
3 ½ cups gluten-free 1-to1 flour (or all-purpose flour)
2 teaspoons baking soda
1 ½ teaspoons salt
1 Tablespoon Pumpkin Pie Spice (I love the Spicewalla blend)
1 cup chopped walnuts

Directions

Gather the ingredients. Preheat the oven to 350°. Grease and flour two 9x5-inch loaf pans.

Whisk flour, baking soda, salt, and spice together in a large bowl. 

Mix pumpkin puree, eggs, oil, water, and sugar in a separate bowl until well blended. Fold in the walnuts.

Stir flour mixture into pumpkin mixture until just blended. Pour batter into the prepared pans.

Bake in the preheated oven until a toothpick inserted in center comes out clean, about 50 minutes.

PERFECT PUMPKIN PANCAKES with EASY BUTTER PECAN SYRUP from author Cleo Coyle

Whenever I feel that brisk autumn chill in the air, I start craving pancakes, and these Pumpkin Pancakes make a fantastic fall meal. 🍂 Adding pumpkin is a great way to bring extra fiber, nutrition, and flavor to the table. These little cakes are amazing topped with my easy-to-make Warm Butter Pecan Syrup, which is also delicious over ice cream and baked apples. 🍂 As I mentioned above, adding pumpkin to pancakes is a great way to bring extra fiber, nutrition, and flavor to your breakfast table. 

I like to buy a few extra cans of pumpkin puree during the fall shopping discount window, so I can make these pancakes throughout the winter season.

These Pumpkin Pancakes are incredibly good with the Warm Butter Pecan Syrup recipe I'm also sharing. The syrup is quick and easy to make and fantastic on the cakes, as well as ice cream, baked apples, and grilled peaches. 

Or try my lighter topping idea, which I've included below. It's a deliciously different way to finish these warm little cakes and a much lighter option than the syrup.

Perfect Pumpkin Pancakes


Makes 8 – 10 pancakes, depending on size

Ingredients:

4 tablespoons butter, melted

4 eggs 
½ cup pureed pumpkin (I use canned)
1-½ cups milk (low fat is fine)
1 teaspoon pure vanilla extract
1 teaspoon pumpkin pie spice (double if you like spice)
(optional) ½ teaspoon orange zest (grated orange peel)
¼ cup dark brown sugar, packed
¼ teaspoon salt 
2 cups all-purpose flour 
2 teaspoons baking powder 

Directions:

Step 1 - Make batter: Melt butter and set aside to cool a bit. In a mixing bowl, whisk together eggs, pureed pumpkin, milk, vanilla, pumpkin pie spice, and (optional) orange zest. Add brown sugar, salt, and the melted butter that you set aside. Finally mix in the flour and baking powder. Do not over-mix the batter at this point or your pancakes will be tough instead of tender. You can make the pancakes immediately or cover bowl with plastic wrap and allow batter to sit in the refrigerator (and hydrate) for 30 minutes to an hour (or even overnight). 




Step 2 – Cooking the perfect pancake: 

(a) Pre-heat: Pre-heat a nonstick griddle or skillet. If you have a good quality nonstick griddle or pan (and there is absolutely no residue on the surface), you will see prettier results without using grease. Butter, cooking spray, and oil all produce mottled surfaces on your pancakes. If you do have an older pan or it does not have a nonstick surface, lightly grease with butter, oil, or cooking spray.

(b) Pour: Using a measuring cup, pour ¼ cup of batter onto the pre-heated pan or griddle; immediately pour ¼ cup more right on top of the first pour. The pancake batter should spread into a perfect circle, about five inches in diameter.




(c) Flip and finish: When you see bubbles begin to form on pancake’s top, it’s ready to flip. Cook lightly on the other side and serve with my Warm Butter Pecan Syrup or my Lighter Topping Option, both are below.

A Final Note from Cleo

Full of buttery sweet caramel flavor, this syrup is delicious served warm over pancakes, but also ice cream as well as baked apples or grilled peaches. Enjoy!

Warm Butter Pecan Syrup

Makes 2/3 cup syrup

Ingredients:

½ cup butter (1 stick)
¼ cup half-and-half or heavy cream
½ cup dark brown sugar, packed
¼ cup chopped pecans

Directions:

Quick warning: Do not melt butter first in this recipe. If you do, the butter may separate and your syrup will not thicken properly unless you boil it down. Instead, use this method: In a saucepan, over low heat, combine solid butter, half-and-half (or cream), brown sugar, and chopped pecans. Stir immediately and continually. Mixture should not boil. When butter is fully melted, remove from heat, cover and keep warm to serve over pancakes, ice cream, baked apples, or grilled peaches.





Cleo's Lighter Topping Option


Instead of using butter and syrup on your pancakes, try this lighter and easier method...

Squeeze juice from the wedge of an orange over the top of your warm pumpkin pancakes and lightly dust with powdered sugar or a sugar-free powdered sugar substitute like allulose or monkfruit

This is a lighter option than butter and syrup, and it tastes delicious—almost like a carnival funnel cake, one of my favorite treats from childhood. The orange flavor also pairs beautifully with the light pumpkin taste in the pancakes.
