Vegetable Quinoa Soup @TinaKashian1 #Giveaway

Hello from TINA KASHIANI love soup in the colder weather months. I’ve tried different recipes for split pea, bean soup, broccoli cheddar, minestrone, and more. I shared a recipe for Mediterranean lentil soup here. Today, I'm sharing a recipe for vegetable quinoa soup that I discovered on Pinterest. I modified it for my tastes. I wasn’t sure about the quinoa, but it “melted” into the soup and the recipe came out delicious. I’ll share more soup recipes as the winter months approach.




Ingredients:

2 medium carrots or 8 baby carrots, diced

2 stalks celery, diced

1 small onion, diced

¼ head of cabbage, chopped (I used a mini cabbage)

2 zucchini, diced

1 can (14 0z) diced tomatoes with juices

2 cans (14 oz) beans of choice, drained and rinsed

1/3 cup dry quinoa

2 teaspoons herbes de provence

½ teaspoon garlic powder

6 cups water or vegetable broth

Salt and pepper to taste



Directions:

In a large pot, heat 1 tablespoon olive oil and add onions, carrots and celery. Sauté for five minutes. Add the herbs for the last minute.


Add remaining ingredients.


Bring to a boil, cover, then turn heat to low and simmer for 45 minutes to 1 hour.


Taste for seasonings and add more salt and pepper if you prefer. Enjoy!
