This cake certainly lived up to its name of being gooey! This is Paula Deen's recipe for the cake but a commenter on the post wrote "Gooey Butter Cake is a century old St. Louis, Missouri original. It was serendipity (happy accident) when a German baker in South St. Louis had an oven fail when making a traditional breakfast butter cake." Several other sources also cite St. Louis as being the birthplace of the cake. No matter! It was delicious albeit on the sweet side. Next time, I might add a bit of lemon zest to the batter or maybe almond extract. Starting with a yellow cake mix makes it easy to whip up. You could also swap out yellow cake for another flavor. The possibilities are endless! I substituted a gluten free mix but you could use a regular one.
1 package yellow cake mix
1 egg
16 tablespoons butter melted, divided
1 (8 oz) package softened cream cheese
2 eggs
1 teaspoon vanilla
2 cups powdered sugar
Preheat oven to 350 °F.
Combine the cake mix, egg and 8 tablespoons butter and mix well with an electric mixer.
Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.
In a large bowl, beat the cream cheese until smooth. Add the eggs, vanilla and 8 tablespoons butter and beat together.
Next, add the powdered sugar and mix well.
Spread over cake batter and bake for 40 to 50 minutes. Do not over bake as the center should be a little gooey.
