I’m a good cook, but I mostly follow
other people’s recipes. I watch my sugar and gluten intake (but not always—as
you’ll soon read), so I’m always scouring the internet for
tasty-looking-but-healthy dishes to make. As such, I’m a continual recipe
borrower—I’ve got no specialty of my own.
With one very unique exception.
Even this one isn’t my own, but gifted to me. And it would not be an understatement to say that this one dish brought to me has made a gigantic impact on me personally and even professionally. It’s become synonymous with my name and my books. It even has its own holiday every November 1 among my readers.
Anyone who has followed me for any length of time knows I am talking about Snicker Bar Salad. <Insert Libby's jaw drop here>
Over twenty years ago while speaking at a conference, a woman came up to my book table and presented me with a tub of something she called Snicker Bar Salad. My love of chocolate is no secret, and the day happened to be November 1—right after Halloween and close to my November 5 birthday. She explained that not only was it delicious and bound to be something I liked, but an excellent use for all the leftover fun-sized Snicker bars hanging around after trick-or-treating.
I admit, calling it a “salad” is a stretch of the standard definition. But it does contain apples, so that’s got to count for something. And I love it. I celebrate it. Every November 1 is known as Snicker Bar Salad Day among my fans and readers. So If I’m asked to share a recipe, you can bet it will almost always be Snicker Bar Salad.
I confess this luscious goodie has no direct relationship to my recent release ONE SHARP STITCH. The book focuses on the craft of needlepoint, and the quirky community of Gwen Lake North Carolina where our main character Shelby Phillips finds herself after a job layoff. The supposedly short-term stint watching over her mother’s needlepoint shop turns into a great deal more. Shelby must navigate familial tensions, opinionated customers, puzzling clues, and a perfectionist sister as she tries to unravel what has happened to an old schoolmate.
If you are the crafty type—or want to be—you’ll find instructions for a needlepoint project in the back of the book. But if you’re hungry, or just feeling adventurous to try my must-have breakfast (yes, I said breakfast) before November rolls around, I invite you to mix up a batch of Snicker Bar Salad and see for yourself.
Snicker Bar Salad
5 (or more…) fun-sized snicker bars, chopped into small
bits
2 apples, diced (I like Envy but
Granny Smiths work well, too)
one 5-oz package vanilla instant pudding mix
8 oz Cool Whip
1 c. milk

Thank you for the reminder of Snicker Bar Salad and for the recipe! Yes, it's delicious, but oh so addictive. Maybe it's best to have a special holiday for it allowing for it to be made rarely that way. Or make it to take somewhere and only take out a very small sampling. After all, it's quality control because you don't want to take it for others to eat and it not taste just right. :)

Wowee...this is the best recipe I've seen in years...5 ingredients, but better than Jamie Oliver's 5 Ingredient Recipes. I love that it only takes a few minutes to make, and it is sure to be the life of the party!!! This is definitely going to be a staple in my home, and we will be thanking you, Alllie as we enjoy it! DeleteSnickers salad is a staple here! As are all the dessert salads- Butterfinger salad, circus peanut salad, Oreo fluff, rhubarb salad.... All parties and potlucks must include at least a couple.
