Coffee, Wine & Baked Goods, Oh My!

Anastasia Pollack is the reluctant amateur sleuth of my Anastasia Pollack Crafting Mysteries. She and I have many things in common. We both went to art school. We both decided we lacked the teaching gene and instead, worked as designers/editors in the consumer crafts industry. We both gave birth to two sons. And if humanly feasible (which, thankfully, it’s not!), we would both exist entirely on coffee, wine, and baked goods.

One big difference—Anastasia has a higher tolerance and better metabolism for all three than I do. With each passing year, my tolerance continues to plummet, and my metabolism has now slowed to a snail’s pace. I’ve cut back to two cups of high-test a day, one cup of decaf. Otherwise, I don’t sleep. Wine is now limited to one glass and only occasionally because more gives me a headache. And baked goods? If I so much as look at dessert, I’m a pound heavier when I get on the scale the next morning.

So far, Anastasia has none of these problems. Although she does on occasion bemoan her pear-shaped silhouette, she lacks the willpower to do much about it, irrationally chalking it up more to genetics than calories. Then again, she’s on the lower end of middle age, while I’ve transitioned into a woman of a certain age. I’m eating way more seeds and weeds than my younger self ever imagined possible, and I’ve even developed a taste for vegetables I used to abhor, like asparagus and brussels sprouts.

This doesn’t mean that I don’t occasionally indulge. Everything in moderation, though. I’ve also discovered I now prefer less coma-inducing sweets, like Blueberry Ricotta Cake. Not only does it satisfy my baked goods craving, but a small slice goes a long way.

Meanwhile, Anastasia has no idea what the future holds for her – either plot-wise or body-wise. However, you can discover what new murderous mystery I’ve visited upon her in Embroidered Lies and Alibis, Book 15 of the Anastasia Pollack Crafting Mysteries, releasing February 10th.

BLUEBERRY RICOTTA CAKE

by Lois Winston

Ingredients:

Nonstick vegetable oil spray

1-1/2 cups all-purpose flour

1 cup sugar

2 teaspoons baking powder

3/4 teaspoon kosher salt

3 large eggs

1-1/2 cups ricotta

1/2 teaspoon vanilla extract

1 stick unsalted butter, melted

1 cup fresh blueberries, divided

Directions:

Preheat oven to 350°. Line a 9"-diameter cake pan with parchment paper and lightly coat with nonstick spray.

Whisk flour, sugar, baking powder, and salt in a large bowl.

Whisk eggs, ricotta, and vanilla in a medium bowl until smooth; fold into dry ingredients just until blended. Fold in butter, then 3/4 cup blueberries.
Pour batter into pan. Scatter remaining blueberries over top.

Bake cake until golden brown and a tester inserted into the center comes out clean, 50–60 minutes. Let cool at least 20 minutes before unmolding.

Embroidered Lies and Alibis

An Anastasia Pollack Crafting Mystery, Book 15

A Stitch in Time Could Save a Life…

When Anastasia’s mother Flora is offered a free spa vacation from Jeremy Dugan, a man connected to her distant past, Anastasia and husband Zack suspect ulterior motives. After all, too-good-to-be-true often spells trouble. Their suspicions are confirmed when the FBI swoops in to apprehend Dugan. However, Dugan isn’t who he claimed to be, and his arrest raises more questions than answers.

The Feds link Dugan to a string of cons targeting elderly single women across the country, but his seemingly airtight alibi leaves investigators stumped. Then, shortly after his release on bail, he’s kidnapped. A certain segment of New Jersey’s population is known for delivering deadly messages, and the FBI believes Dugan received one of them.

Meanwhile, bodies begin showing up in the newly created public garden across the street from Anastasia and Zack’s home. With two baffling crimes, no clear suspects, scant evidence, and every possible motive unraveling, both the FBI and local law enforcement are once again picking Anastasia’s brain. This time, though, her involvement is far from reluctant. Will she stitch together enough clues before she or someone she loves becomes the killer’s next victim?

Craft project included.

Exploding Gnocci @LibbyKlein

Libby Klein There is no recipe today. The recipe exploded.

I was trying to make ricotta gnocchi. I followed the directions exactly. I made a lovely pan sauce of fried pancetta and sage in butter and olive oil. I still have the grated lemon waiting to go overtop the finished dish. When I put the gnocchi in water they exploded like Mentos in Mountain Dew. I had one giant gnocchi that looked like a life raft.

Totally disgusted, I let it cook the requisite three minutes, then scooped it out of the water with my spider, and dumped the whole concoction into the butter and oil. It looked like it was breathing it was as mad as I was. Then I got the idea to bake it as if it were cheese puffs. So I scooped little meatball sized dumplings onto a parchment lined sheet pan and stuck them in a 350 degree oven for 10 minutes.

They taste right. They kind of resemble little potato pancakes (even though there is no potato since I'm allergic.) For a side dish to meatloaf these would be pretty good. All they are is cheese, flour, and egg with the butter, sage and prosciutto baked in. I don't recommend trying to make exploding gnocchi. Try Vicki Delaney's recipe for Ricotta Gnocchi instead. But if you ever make it by accident, just know you can recover by baking them in the oven and serving them anyway.

Have you ever had a recipe fail so badly you could only pivot or throw it out? Let me know in the comments.

Vice and VirtueLayla Virtue, a blue-haired, 30-something recovering alcoholic and former cop is trying to reinvent herself as a musician—between AA meetings, dodging eccentric neighbors at her trailer park, and reconnecting with her mysterious dad—in this unforgettable new mystery brimming with hilarity and heart.

Layla is taking her new life one day at a time from the Lake Pinecrest Trailer Park she now calls home. Being alone is how she likes it. Simple. Uncomplicated. Though try telling that to the group of local ladies who are in relentless pursuit of Layla as their new BFF, determined to make her join them for coffee and donuts.

After her first career ended in a literal explosion, Layla’s trying to eke out a living as a rock musician. It’s not easy competing against garage bands who work for tacos and create their music on a computer, while all she has is an electric guitar and leather-ish pants. But Layla isn’t in a position to turn down any gig. Which is why she’s at an 8-year-old’s birthday party, watching as Chuckles the Clown takes a bow under the balloon animals. No one expects it will be his last . . .

Who would want to kill a clown—and why? Layla and her unshakable posse are suddenly embroiled in the seedy underbelly of the upper-class world of second wives and trust fund kids, determined to uncover what magnetic hold a pudgy, balding clown had over women who seem to have everything they could ever want. Then again, Layla knows full well that people are rarely quite what they seem—herself included . . .

Silly Libby
Libby Klein writes ridiculously funny murder mysteries from her Northern Virginia office with a very naughty calico Persian named Miss Eliza Doolittle, and a sweet black Lab named Vader. She can name that tune for 70s and 80s rock in the first few notes, and she's translated her love of classic rock into her Layla Virtue Mysteries. Libby was diagnosed with an autoimmune disease that prevents her from eating gluten without exploding. Because bread is one of her love languages, she includes the recipes for gluten free goodies in her Cape May based Poppy McAllister series. Most of her hobbies revolve around travel, and eating, and eating while traveling. She insists she can find her way to any coffee shop anywhere in the world, even while blindfolded. Cleo Coyle's FOOLPROOF STUFFED MUSHROOMS with Ricotta & Spinach #LowCarb #LowCal #Keto #Vegetarian

From Cleo Coyle: A few of our readers asked us to share low-carb recipes, and these Foolproof Stuffed Mushrooms fit the bill. Why are they foolproof? Because you won't have to worry about under- or over-cooking them. Ever.

Feel free to switch up the ricotta-spinach filling if you don't like this combo. You can try almost any combination of soft and hard cheeses and even sprinkle on breadcrumbs (or pork rind crumbs if you're following a low-carb program). For a version with meat protein, you can add crumbled (cooked) bacon, or cooked sausage, or chopped pepperoni, or any type of pre-cooked and seasoned ground meat. Whatever you choose as your filling...

Here is my easy, foolproof method
for cooking stuffed mushroom caps:

(1) 🍄 Place empty mushroom caps (open sides down) on a baking sheet or pie plate and cook for 10 minutes in a pre-heated 400 degree F. oven.

(2) 🍄 Using two forks, flip the mushroom caps and fill them.

(3) 🍄 Place the filled caps back in the 400 degree oven for 10 minutes more, and they're done!

Now for an example of said method in action...

🍄 A Recipe Note from Cleo

Mushrooms are a great inspiration for a murder-mystery writer, which is why I eat them often. :) They're also incredibly low in carbs and calories. Five medium mushrooms clock in at about 20 calories with 3 grams of carbs, and they're fat free.

Marc and I enjoy these stuffed mushrooms as snacks in the afternoon or evening. But these elegant little bites also work beautifully served at more formal dinners or on party trays. They go great with cocktails or wine. Best of all they're quick and easy to make; and with this foolproof method, they'll come out perfectly cooked every time.

Even better, the health benefits of the humble 'shroom are many. According to WebMD, "Mushrooms are a rich, low-calorie source of fiber, protein, and antioxidants. They may also help to lessen the risk of developing serious health conditions..." And they're good sources for Selenium, Thiamin, Magnesium, and Phosphorous.

Ricotta and spinach also have health benefits, and they're my favorite combination for this recipe. May you eat with joy and in good health!

🍄 Cleo's Stuffed Mushrooms
with Ricotta and Spinach

Ingredients:

1/4 cup frozen chopped spinach, thawed and well drained

8 to 10 fresh mushrooms (medium to large)

1/4 cup ricotta cheese (whole or part-skim)

2 tablespoons strong, salty grated cheese (I use Romano)

1/4 teaspoon white (or black) pepper

2 tablespoons (1 ounce) shredded mozzarella cheese (whole or part-skim)

Step 1 - Make the stuffing: Thaw your chopped frozen spinach (but do not cook). Place the spinach in a colander over the sink and gently press out as much liquid as you can. (I do this hours in advance or even an entire day before. Then I place the spinach in a bowl, loosely cover it with foil and keep it in the fridge to dry it out even more.)

After your spinach is well drained, measure out 1/4 cup of it and mix it in a bowl with the ricotta, the grated Romano cheese (or your favorite hard, salty cheese), and the ground pepper. Do not add the mozzarella yet.

Step 2 - Prep the mushroom caps: Clean your mushrooms and remove the stems. Lightly scrape the inside of the caps with the tip of a small teaspoon to hollow them out a bit more. Place the mushrooms, open side down, on a baking sheet or pie plate. Bake for 10 minutes in a well pre-heated 400 degree F. oven.

Step 3 - Fill and bake: Remove the pan from the oven and, using two forks, flip over the caps. Now their open sides should be up. Fill each cap with the spinach-ricotta stuffing, garnish with a bit of shredded mozzarella and return the mushrooms to the oven for another 10 minutes. Remove the pan, plate the caps and enjoy!
